    An Italian Tries American Ice Cream for the First Time
    Who doesn't like ice cream? I put that question to the test today by giving my gelato-craving Italian wife her very first American ice cream! In this video Eva tries Breyer's Reese's Peanut Butter Cup ice cream, Ben & Jerry's Cannoli ice cream, "Itti Bitz" liquid nitrogen ice cream (alla Dippin Dots), and a classic hot fudge Sundae.

    ITALIAN BRIOCHE RECIPE
    Makes about 6 buns.
    While we hate to release recipes that require unusual equipment, we strongly recommend attempting this recipe with a stand mixer, such as this one: amzn.to/2FtW7Su . It is possible to make the dough by hand, but it would require hours of kneading!
    For this recipe, you will need:
    - 2 1/3 cups bread flour
    - 1 cup all-purpose flour
    - 1/3 cup sugar
    - 2/3 cup whole milk, plus a little extra for glazing
    - 4 eggs
    - 3.5g yeast (half of a 1/4oz. packet)
    - 1 tbsp lemon zest
    - 1 tbsp orange zest
    - 1 tbsp honey
    - 4 1/2 tbsp lard or butter
    - 1/2 tsp salt
    - 1 tbsp olive oil
    Combine the flour, sugar, milk, 3 eggs, yeast, citrus zest and honey in the bowl of a stand mixer. With a dough hook attachment, stir all together (low speed) until well-mixed, about 3-4 minutes. Increase the mixing speed to high and knead vigorously for about 15 minutes. During this time, the dough should form into a unified ball. You may need to stop and scrape the sides of the bowl with a spatula occasionally.
    After 15 minutes, add the salt and gradually incorporate the lard as the dough continues to knead. Do this one small spoonful at a time, allowing each to fully mix in before adding the next. Continue high speed kneading for 5 minutes. Test the dough by pulling a pinch of it. It should be very stretchy and elastic, with a smooth texture. Knead longer if necessary until the consistency is correct.
    Lightly coat a large mixing bowl with olive oil and transfer the dough into it. Cover with plastic wrap and allow to rise. The time this takes depends on the temperature. If it's cold, it could take up to three hours while on a hot day it could take as little as an hour. When the volume of the dough has roughly doubled, it's ready!
    Begin cutting pieces of the dough to form the buns. You will need 6 balls about 3-4 inches in diameter and 6 smaller balls about 1-1 1/2 inches. We recommend weighing the pieces to achieve uniform results, in which case the larger balls should weigh about 80g each while the smaller should weigh 15.
    Roll each ball until it is smooth and even and arrange them all on a baking sheet. Cover with a kitchen towel and allow to rise further (30 minutes to 1 hour, again depending on the temperature). The balls should grow slightly, though they won't double as before.
    Preheat your oven to 375 degrees F. While the oven heats, use your fingers pinched together to press large depressions into each of the larger buns. Please the smaller balls into these holes. Whisk 1 egg and 1-2oz. of milk together and brush this mixture over the entire surface of the buns.
    Bake for 25-30 minutes, or until the surface of the brioches develop a golden crust. Remove from the oven and allow to cool. Slice in half and add your favorite ice cream or gelato.

      They got processed food, also. For fuck's sake, they make Nutella.... It's no different in America. Go to a real creamery and you get real ice cream. But if you want cheap, affordable and transportable foods you are going to get processed stuff that won't taste as good as the real thing.

    To be fair, Breyers ice cream is the absolute worst. Its oily. And it doesn't melt properly which is alarming. Good ice cream is hard to find. Gelato in Italy is phenomenal. Everything in Italy is phenomenal.

      @@Galexlol well I'm Canadian, so we have some of the same as Americans but we have our own too. Island Farms is a good local one, and Hagen Daas is pretty good too. Just expensive

      @@michaelnajera901 I've never tasted american ice cream, unless it's the stuff they sell in fastfood (I hope not). As for Gelato, in Italy you have industrial processed one and artisanal one and they are very different. The artisanal also is divided between the one made with flavours and powderd ingredients, and the one made with whole fresh ingredients (milk, fruit, etc). The latter one is the one with an international fame, it's handmade and rather difficult to make with the right texture and balance of taste, it can't prescind from good quality ingredients and how good is it depends on the skill of the ice cream maker.
      Maybe I was unlucky but I've never tasted a good gelato north of Rome in my life.

      @@sapinta American ice cream is not the same as fast food soft serve. Much like anything in America, it can be really good or horrendous, depending upon who you buy it from. An example of a good regionally available chain is Jeni's (I often use their specific recipes as well as their base recipes to make homemade ice cream).
      The difference between high end American ice cream and high end gelato is primarily fat content, serving temperature, and air content. This gives a different flavor-texture tradeoff. As an example, it is much easier to make a high intensity chocolate Gelato than a similarly intense chocolate ice cream. To make up for lower temperature and higher fat, the ice cream maker would have to add way more chocolate to get the same effect, which risks ruining the texture.
      Good American ice cream shops often also do sorbets, which are non-dairy and are very good at getting intense fruit flavors. This is probably important to mention because fruit ice cream itself is something someone used to Gelato might not actually like.

      Sorbets are a different thing here, I don't know if we are using similar words but for different things.

    I ate gelato in Bisceglië, South of Italy and it changed my perception of “ice cream” it’s amazing, I tasted stracciatella, cioccolato e fragola, I went back twice on one day😂 Love the videos!!

    I live in Rome, traveled all over Italy and I have to tell you that a lot of gelato has cookies or other ingredients added! My favourite gelato place is in Casino they do a strawberry and cherry cheesecake gelato with actual strawberries and cherries, as well as tiny waffle bits 😍

      Yeah, I'm Italian and I really don't know how she came out with that idea that Italian gelato doesn't have other stuff added 😅
      A lot of gelaterie now are experimenting with new flavours, especially the ones in the south, and most of them have a variety of flavours which goes from all time classics (chocolate, hazelnut, vanilla, strawberry, lemon, coffee) to the most extravagant things, like cheesecake, Oreo, apple pie, tiramisù, babà, and maybe local specialities depending on the city you're in, and I wouldn't be bothered at all if I found a cannolo flavour.

      The point Is "make things properly" as Eva says about the American icecream craftmade. In Italy we don't sell "cannoli's gelato" made with mascarpone. In Italy if you eat a gelato with Oreo you' ll find Oreo in it, not something different, Always, in Industrial or in Handcraftmade gelato.

      @@dianapohe I was wondering that myself, the last time I was in italy, you got 20-30 brands of different gelati on every stand and having had the weirdest thing added. Same here in Austria for the italian shops who do their gelato themselves. Basically everything is allowed. But tastewise still a ton of difference to the Ben And Jerrys of this world which are just sugary tasteless whatever...

      Well actually there are many Italian women who are bad at cooking. And Eva is somewhat picky even for Italian standards sometimes. But she can also cook pretty damn well, so. I know girls who are totally inept in a kitchen and still unbearably picky with food. And usually they never know what to order in a restaurant. They are the worst, imho.

    I went to Italy in the 80's (as a teenager) and I ate gelato 2-3 times a day every day I was there. The best! I have tried our american attempt but have not been satisfied. I need to learn to make it myself I think.

      When I first went to Italy in my early twenties I was shocked by the quality and diversity of Italian gelato. We have Italians in Germany selling ice cream and I liked it but after I came back I was so spoiled and had to learn that most of the Italian ice cram cafes in Germany had shitty ice cream in comparison. There are exceptions who make their ice cream the Italian way but you have to search for them.

      @@aldee2787 Luckily my city has quite a few outlets which make their own ice cream. I frankly was shocked when I went to Puglia a few years ago, that we have now reached the same standards. But this also is no surprise, those outlets are all run by italian guys doing their own Gelato!

    Eva is an incredible & wise lady, she knows so much about good, amazingly delicious foods & snacks, every time she cooks/bakes something I get so hungry or longing after for that snack...NetFlix must give Eva a cooking Show so Americans can learn how to cook properly in Eva Style when you want something homemade...

      She has an incredible palate. Most people are not that orally sensitive to subtle flavors. It’s possible not many Italians are as sensitive as she is. Maybe, maybe not. I don’t know any Italians like Eva.

      I wasn't born in Italy, but I live here for a long time, and I can tell you that 90% of them have the mouth trained to get even the most subtle flavour.
      They are very good at cooking and tasting

      “Ma” means “but”, in this case it is more of an interjection to express astonishment and disappointment, as you would do when you say “but why?!”

    We get B&J also here in Italy in Supermarkets and I like it as a quick fix when I'm too lazy to go to the ice cream shop. When at the shop I will always have the brioche instead of the cone, the best combo possible. Greetings from Umbria, the green heart of Italy.

    When the scene opened and you were ordering, I knew exactly where you were. My entire soul tingled with that sight I have seen every summer. We have vacationed near there for over 40 years and we couldn't go this year due to Covid. Thanks for helping me live vicariously. (try the ginger)

    I haven’t visited Italy yet, my friends that did say that Gelato is amazing. As for me, I’ve had Gelato in my hometown of Houston and Las Vegas. In Texas, we love Blue Bell ice cream.

      If you do visit here someday, remember to not enter the first gelateria you find though. Always ask a local where is the best gelateria of the neighbourhood in their opinion, and head there. And everywhere you go, repeat the process :). The difference between an average gelato and a very good one is still huge and if you want the amazing experience your friends told you about look for the real deal.

      That is sad. What about Graeters? Very good ice cream there. I did find some good Gelato in Nashville inside the Gaylord Opyland Hotel and Convention Center. It's not as good as in Italy, but it definitely got the job done.

    When I was in undergrad, my mentor (from Italy) took me out for gelato. Hazelnut was the first I ever tried, but I also quickly discovered that I liked pistachio and raspberry as well.
    Hazelnut is still my favorite, but any flavor is delicious.

    I had gelato every day in Sicily for the two weeks I was there last year! I missed the gelato so much when I got home, I was sad. Even the gelato at the Italian bakery in Brooklyn isn't the same. Benvenuta!!

      I sort of Agree,for me it's certain ice cream flavours that are EXTREMELY sugary,I remember buying this Oreo Flavoured ice cream, brought it home,ate a little to see how it tastes, to my disappointment, it just tasted like PURE sugar, no oreo taste at all 😔,same with Bubblegum flavoured ice cream 🤢

    I am in Australia and buy Reese's it never lasts long in my treats jar but love gelato because we had a icecream man mmm sorry a gelato man park out the front of my house when growing up so lucky . I grew up in a multi cultural suburb yes yes concrete gardens with some. My best friends are from everywhere we all loved the Gelato van. I lived in Watsonia next to binak park Australia 🇦🇺 has every culture and is the best way to grow up

      Yes, there’s definitely PHENOMENAL ice cream here in America. You might have to seek it in places than the grocery store though. I’m wondering, do they have no junky, low quality foods in Italian grocery stores? Everything is high quality, artisanal level food?

    Omg guys guess what, I live in Tucson, AZ and found an amazing gelato place which is sooo good and better than any other gelato I've had in bigger American cities like SF, LA etc. And I was wondering how is it THAT good... guess what.. we found on their website that they get their ingredients and everything shipped from italy and made fresh everyday, and the owner is Italian!
    Hahaha.. I'm sure Eva will be happy to know !
