If you make this you'll never look at store bought ice cream the same. Chocolate Ice Cream, 1830 8 oz. of semi-sweet chocolate, melted 4 egg yolks 2 cups of cream 3/4 cup sugar Ice Salt Melt your chocolate in a pot on low heat then set aside for a few minutes to cool so that it is only lukewarm. In another bowl whisk together your egg yolks with the cream and sugar. Once thoroughly mixed pour in your cooled chocolate. Whisk together till combined then return to your heat. Ensure that your heat is low and whisk constantly until the chocolate has fully incorporated. You can tell that this has happened because the mixture will turn a rich brown color. Please be careful to not have the heat too high or the egg yolks may solidify. Remove from your heat and pour into a sabotiere surrounded by ice and salt. Churn until it becomes ice cream. If you don't own a sabotiere it is perfectly fine to place the ice cream in a Tupperware container, or a metal sealed container then to put it in the freezer. If you are doing this be sure to give it a good mix at least once every half hour until frozen. This can take anywhere from 2-4 hours.

The way I learned it as a kid, was to leave it in the freezer for the initial 2 hours. Then take it out and mix it, return it to the freezer for half an hour, and repeat until at least a total of 4 hours freezing time.

Ice cream is very thick, same with marshmallows. Easy for equipment to get broken. People act like you just put stuff in a machine and it's good to go. Nope you gotta replace parts to avoid contamination of broken metals in your ice cream.

I saw that and I got a bit concerned lol. I’m used to the tiny “fires” of the gas stovetop and it looked like putting relatively sensitive chocolate with the intention to melt it straight into the fires of hell, surprised that it came out ok.
That chocolate is indeed burnt. You can tell from the consistency it has right when out of the heat, probably it tasted bad as well but the magic of TV hid that lol.

My grandpa said that as kids in the 1930s in MN, they would pack the barrel with snow, close it and play with it, rolling it around outside in the snow. As a kid I might have tried rolling it down a sledding hill...while sledding😂
i think the inconvenience of " junk" food was such a good thing! can you imagine if you had no refrigeration or freezer and you had to bake every cookie or fry every potato chip you wanted? would certainly feel more like a treat.

While I think she did add a little too much sugar for the mix amount, everything else is nutrient rich foods and sugar is just caloric energy. But that can be balanced with how much you add and how frequently you eat it. But as a whole yeah this ice-cream has more nutrition than an average American's "home cooked dinner".

My grandmothers and my mother made homemade ice cream and butter, churned fresh from the cow and it was so very delicious. Ice cream and many things bought at the store pale in comparison. Making ice cream for ice cream socials was a family event into the 1980's and all the kids were involved with helping. Going at it alone is tough! I think it taught us kids that hard work pays off. Delicious.

There's old technique to store ice during winter in a closed warehouse insulated with hay, straw, sawdust before the invention of refrigerator. Literally called ice house/icehouse And it can be stored as long as till next winter!

I remember at a church picnic we used to make hand churned icecream with an exterior hand crank. We'd have two churns, and it was adults versus kids for who could churn it faster. It was fun. This looks even more tiring than doing it with a hand crank on the side.

I didn’t do it myself, but I read that you don’t need to constantly churn, the pauses, on the contrary, are useful. The fact is, that crystallization will go faster, when the supercooled mass mixes with the mass in the center of its column. Due to the sharp temperature difference between the outer and inner layers. This happens according to chaos theory or the domino effect. If you constantly interfere, then there will be no sharp temperature difference, the whole mass will cool equally and slowly, during the day, freeze.

Did it really need eggs, though? It might freeze much faster if you used more salt, more evenly, with a tad bit of water to help the salt flow better around the ice. and instead of turning the middle container, turn or mix the ice and salt around it.

Back in the 1600s, we used to get the cocoa beans from Spanish traders. The good thing is that, we get saltpetre that we use to make ice. It is much simpler than to buy ice then break it down like this. What we did was similar but the outer tumbler was filled with, not ice but, room temperature water and saltpetre.

When made like this, snack foods have actual nutritional value, especially ice cream. We've managed to strip that away with industrialization.

There's old technique to store ice during winter in a closed warehouse insulated with hay, straw, sawdust before the invention of refrigerator. Literally called ice house/icehouse
And it can be stored as long as till next winter!

So when he said that he appreciated all of the hard work I'd done with our kids and the house and the new dog, and he suggested that "we" make my chocolate pecan pie to celebrate, I knew that I would take over and it would just be more work for me. But he meant it so sincerely- he does appreciate me. He's just clueless how to show that without making more work for me.

I remember at a church picnic we used to make hand churned icecream with an exterior hand crank. We'd have two churns, and it was adults versus kids for who could churn it faster. It was fun. This looks even more tiring than doing it with a hand crank on the side.

Growing up we made ice cream this same way for family gathering though the handle was a little longer. It was the men’s job to turn the handle until it was done. There has never been ice cream that tastes as good as that homemade ice cream

Well done, Justine, you're doing the right thing by pausing while churning your ice cream mass. I didn’t do it myself, but I read that you don’t need to constantly churn, the pauses, on the contrary, are useful. The fact is, that crystallization will go faster, when the supercooled mass mixes with the mass in the center of its column. Due to the sharp temperature difference between the outer and inner layers. This happens according to chaos theory or the domino effect. If you constantly interfere, then there will be no sharp temperature difference, the whole mass will cool equally and slowly, during the day, freeze.

It might freeze much faster if you used more salt, more evenly, with a tad bit of water to help the salt flow better around the ice.
and instead of turning the middle container, turn or mix the ice and salt around it.

Back in the 1600s, we used to get the cocoa beans from Spanish traders.
The good thing is that, we get saltpetre that we use to make ice.
It is much simpler than to buy ice then break it down like this.
What we did was similar but the outer tumbler was filled with, not ice but, room temperature water and saltpetre.
