I use butter flavored Crisco in my chocolate chip cookies. They are very buttery tasting and look more like the Betty Crocker cookie. I get lots of compliments when I take them anywhere.
When I make GF cut out cookies, I always use shortening (Imperial) and I have no issues with spreading. The cookies retain their shapes. I prefer Betty's cookies over Joy's. I like thicker, softer chocolate chip cookie over the thin ones. Great video Amy and Eric!! Would love to see more battles or even taking your Betty Crocker cookbooks and doing the OG version and new version at the same time to see what changed, if anything.
Thank you Lorie Ann. I picked the thicker cookie over the thinner only because it was more. That's it. They both tasted great and had enough crunch. It was a tough decision, but after eating all the evidence, I stand by my decision. On to the next battle...... LOL.
Very interesting to see the difference when using shortening vs only butter, I have only made chocolate chip cookies using the Toll House recipe on the bag of chocolate chips.
I don't have these cookbooks, I guess I need to get them!! I am fascinated by the difference the exchange of shortening for some of the butter makes. I like your idea about doing 25%/75%...
So I too have a BC collection. Smaller than yours. I looked at my Bridal Edition that I got in 2002. The recipe says 1 cup Butter OR Margarine. The Cooky Book cookbook from 1963 has 1/2 cup Butter OR Margarine. My 1961 Picture Cook Book cookbook has 2/3 cup shortening that says part Butter. And the 2022 edition has 1.5 cups Butter.
‘Better homes and Gardens’ has in my opinion the best chocolate chip cookie recipe ever. Next up ‘BHG New Cookbook’ vs ‘The Good Housekeeping Cookbook’ cookie battle!!

Interesting….my recipe is all butter but they never spread like that. I get nicely puffed cookies. There’s got to be something else going on that makes that cookie spread like that.

I prefer a crisp cookie, so I think Joy of Cooking baked smaller and more time would make it crisper. Betty was more of a “cake like” cookie

The sound of that old Pro KitchenAid is so distinct and it’s so nostalgic for me. That exact sound woke me up on Sunday mornings, mum making waffles.

You just need to add a little more flour to your cookie dough with the butter and that will make them more like the other ones
