Brooke has another video where she talks about the cakes. In fast speed. She begs the cakes and crumb coat them on one day and refrigerate some the second day she coats them with all of the actual frosting on the cake itself. The third day she actually puts the actual decoration on the cakes and actually sent them out to the customers on that day they are picked up three times during the day they actually have an appointment when to come and pick them up.

It's always so fun to see how commercial bakeries work and what goes into them. Thanks for sharing! I did have a question - with commercial ovens like the one you have do you find you need to switch the racks mid bake? (Like switch which rack a tray is on.) I have to do that with my home oven to get an even bake and it always drives me crazy.
Biscoff is actually Belgian now, the brand is called Lotus but they keep the other name abroad. Belgian speculoos or speculaas is amazing. The paste was an invention of someone on a tv contest. Everyone soaks their speculoos in coffee or tea and they put it on bread, so she invented an already made paste. Genius.

No we dont need to, because commercial ovens have fan inside for even distributer of heat
