I love this video; it shows how just one determined individual can be productive. Your dough balls must take some time and labor to produce, and those dough containers must be heavy. What a great system!

When do you find enough time each day to prepare all the cookies, to bake for the next day? Plus cakes? Wow....
She has a staff of 10 and a production kitchen outside of the bakery that you see in this video. She has a team that’s the only way you can grow without killing yourself
There is another off-site bakery site where the actual cookie dough is actually made and then the cookies are made into the balls, weighed, put into the plastic bins and brought here for Brook.
There is a video showing what I just shared with you.
Brooke has another video where she talks about the cakes. In fast speed. She begs the cakes and crumb coat them on one day and refrigerate some the second day she coats them with all of the actual frosting on the cake itself. The third day she actually puts the actual decoration on the cakes and actually sent them out to the customers on that day they are picked up three times during the day they actually have an appointment when to come and pick them up.
I 'm wondering if she has help editing & posting the videos now that she is so busy & has added staff to help with her fabulous success.

I so enjoy seeing you work! How I would love to have my own shop. The most popular flavours for my cookies are orange with pecans and apple with raisins. And yes, nuts can be a problem in a bakery but I bake to order. 💙
