The worst bleeding I've had was a bright red commercial yarn (Patons Kroy Sock). it was on Christmas socks, so I've only worn them twice. They bled both times, so the white parts are kind of pinkish. It's fine. They're supposed to look kind of like candy cane stripes anyway. Now, if I'm worried about bleeding I use color catcher sheets.
As for crocking, the most notorious culprit is natural indigo dye, which is why new jeans that haven't been stone washed or acid washed or gone through some weathering process, will almost always turn your hands blue. Indigo doesn't bond that well with the cotton fiber (which is why jeans fade so readily). I think it's technically a feature, not a bug. 🙂

Have you ever tried synthrapol or retayne to deal with bleeding? Synthrapol is a surfactant and is good at removing excess dye. I use it when hand dyeing protein (animal) fibers.
I knit rarely with cellulose (plant) fibers but quilters who use cotton prints and weavers who use cotton warp seem to swear by Retayne, a color fixative.
