I don't think they're bland at all, once all the sweetness & butter melt into them. My mom would quarter & deep fry flour tortillas, dusting t h em with either powdered sugar or cinnamon & white sugar. So good! They were always popular at parties or for a cheap snack. It's a family tradition with Mexican hot chocolate (Abuela brand) to go with. Love my Latin heritage! 😉

You could be talking about phyllo dough. Hell you could even be talking about Pillsbury crescent roll dough which isn't croissant dough btw. Melted, butter should be on the bottom not sweeten condensed milk. It is too easy for that to burn. Not really super hot on the tortillas even though I do like the mission tortillas for other things. This just seems like a commercial for your sponsors then for a dessert. Filling looks too dry. Maybe peach pie filling instead of plain peaches or at least some peach juice to make filling less dry. For streusel crumble on top could also, maybe use some chopped nuts in the crumble for a little bit more crunch. Maybe either some sort of pastry wraps or crapes might be a better idea. I think you had the start of a good dessert but needed to expand it better. With just a few changes it doesn’t make it any more complicated or time-consuming. I can see why you would definitely need the ice cream for moisture.
This did not appeal to me at all. Especially not with all those wrappings. There was a lot of dough and carbs. It looks like it would burn in the oven. I would not try this recipe

For me I find the fork the best option to make crumble but if I had that kind of masher that be better.
