Yes, using the second method with the MK Slicer plugin you get a MIDI item with the note velocities automatically detected from the source audio. As far as I can tell, it's pretty accurate on its own, but you can always tweak the velocities manually, and you can also limit the output velocity range, so that it doesn't get too crazy. After that, everything depends on the drum plugin you're using. In Hertz Drums you've got 6 dynamic layers for each articulation, and it all works perfectly fine with the midi you get from MK Slicer.
