You don't , you just keep it open that's how I cook my Argentinian food in Canadá or in argentina brother pretty simple and better results.
Always be there do not move and you see the difference.

This is broken grill,instead of trashing ,i modified it to charcoal you know what im saying 😆 .charcoal bbq is great.thanks for Watching
