I am surprised nobody has suggested to you about backing up your work when drilling with a spade bit. Put a piece of scrap material behind your work to stop splintering or tear out. Drill through your good board into the scrap piece. you should then have a clean drilled hoe on both front and back side. any way I enjoy watching your progress on your boat.From Tacoma, Washington great job!

Looking good in the boat now James. Instead of drilling an 18mm hole in each side, you could set a protruding M7 or M8 bolt in each end of the dowel and cut a vertical slot in the shelf sides to hold the bolts. So the dowel just drops in. I wondered if by the time youve cut a hole far enough in and with the thickness of the dowel, you'll be able to get anything thicker than an OS map into that shelf!

Seen them horns mounted just in front of a drivers cab window while he steers a wheel sat in a seat, on a narrowboat, so....horizontal on the roof with a press thumb button on your tiller extention. THAT'S just too much fun!!!
With regard to fitting the horn. A bolt head slid into the slot on the horn then pass that through the bulkhead and washer and lock nut on the interior. If necessary grind off excess bolt thread. Red section of horn points downwards to prevent ingress and retention of dirt and rain etc.

I notice you do not paint the back of your doors. When I was in the wood trade I was told that if you veneer or cover a surface with plastic, paint etc. you should do the same on the reverse side to avoid the wood or ply wood from warping. Like the videos especially the advent ones.
I think you need to make that hole in the floor and find a way to secure the table stand to the base of the boat (weld, epoxy, etc.) - that will be the best looking solution and make the table rock solid. From the looks of it, I think your current solution will only last until the first guy bumps into your table - if it wobbles, it breaks.

It's good practice to use glue on trims with pins. With time, panel pins could pull out with use.
