I add little bit of jaggery and use rock salt . I put the salt ( கல் உப்பு ) in the hot kadai after switching it off. While roasting I sprinkle little salt so that there is no pungent smell. ( நெடி)

Venkatesh, your Idly powder recipe, looks like a typical Madhwa household recipe. My grandmother is used to make almost like this but instead of mixie ,the whole mixture was hand pounded.
