This is best of best ( cream of crop) milagai powder for idli. Authentic. My grandma add dry coconut powder( kopparai thengai) to milagai powder. It taste good too. Like sir had mentioned @7:00 there are many add-ons to this powder.

Fried red chillies if grind with the stem(Kaambu) in mixie it gets ground well. The stem gives more aroma to the powder(podi) and it has lot of fibre, good for health too. Even for rasam sambar, ordinary milagai podi too I grind with Kaambu (stem)only. So the Kaambu need not be discarded.
If you grind with the stem it will reduce the spicy nature of chilli. Also sambar powder or rasam.powder or idli podi powdered with the stem of redchilli will go bad quickly..(bugs)

INGREDIENTS:
1. Ulutham paruppu (urad dal) - 250g
2. Kadalai paruppu (chana dal) - 125g
3. Thuvaram paruppu (toor dal) - 1tsp
4. Perungayam (asafoetida) - Half nellikkai (gooseberry) size
5. Karuppu ellu (black sesame) - 2tbsp
6. Vellai ellu (white sesame) - 2tbsp
7. Milagai (dry red chillis)- 60-70nos/75g (adjust to taste)
And salt to taste
