- How to make Japanese fried chicken. This simple, yet authentic recipe as demonstrated by Chef Dai will turn your plain chicken into extremely delicious and succulent fried chicken.
Ingredients:
Salt x pinch
White pepper x pinch
Sake x 1 Tbsp
Soya sauce x 1 Tbsp
Grated ginger x 1 tsp
Grated garlic x 1 tsp
Sesame oil x 1 tsp
Potato Starch (or corn starch) x 2.5 Tbsp
Chicken thighs x 3
Vegetable oil for deep frying
Lemon wedge x 1 (optional)

Idk about other countries, but you can find potato starch (Kartoffelstärke) in literally any super market in Germany. Just a heads up for fellow Germans who didn't know this and were about to leave for the next asia shop.

in my many years of making fried chicken, i can say that this frying method definately is important for tender/breast cuts, but for thighs it really doesnt matter. they stay juicy no matter what you do to them. i fry them @170C for about 6-8 min depending on the size. never failed.

I don't know if I'll get a reply since it's pretty old. But I wanted to know if there's a difference between corn starch and potato starch for the crispiness?
I've tried another recipe, and they added egg before adding potato starch. I wonder if it's why the crust isn't crispy. Or only because I used corn starch instead....

Hi chef, great recipe. I will try to do it, however whenever I make recipes that involve frying I have a problem: the temperature of the oil. Although I have a thermometer, it is difficult for me to maintain a constant temperature, so I often end up concentrating more on the oil than on the food I am frying, and I would like to learn how to estimate the temperature without depending so much on the thermometer. What tip could you give me?
What if I have no access to sake, can I substitute with beer or white wine? And does a potato starch can be substitute into corn flour?
