Professional Chef here! I often provide career guidance to high school students who are interested in the culinary arts.. I want to make sure they have a true passion for food because the work can be grueling.. And to illustrate what I mean by 'passionate', I often point them to this channel! Your peek behind the scenes of those who are relentlessly pursing culinary perfection is the perfect example.. if they don't come back to me super excited and charged after watching how its done around Tokyo, then that indicates that perhaps they don't have it in the heart like all the wonderful cooks and chefs you highlight on your channel! so you support underpaid, overworked cooks? the working conditions here in the us is nowhere near japan where ALL workers share the same duties regardless of their roles, here in the US the "professional chef" just act a boss yelling at everyone and making everyone do stuff while they do nothing and take credit. i used to be a line cook for high end catering, the "professional chefs" rarely get their hands dirty they are there to talk to clients and pretend they made this when its the low paying kitchen staffs that do all the work behind the scenes.

Can’t speak for all the other US chefs, but the 30 years of my career successes has been driven by these personnel management guard rails: 1) I treat my employees with family like respect. 2) Working behind line more than in front. Meaning I can at any moment take over any station to keep the ship afloat 3) Fostering an environment of continuous education and improvement. Eg. I’ll happily pay the certification expenses for any cook who asks. I achieve results because my employees want to do their best for me… and not because they’re afraid of getting fired. And I agree, More chefs need to focus on this. The absolute easiest part of my job is to constantly make great tasting food…. Retaining employees, continuous innovation and making an actual profit are hardest parts.

I worked with several high end catering with so called "michelin" trained professional chef, I had roles as line cook, expo chef and prep... the main chef never cared for the staffs who got the ball rolling for them. They always come in and take credit, in events where we manage more than 15,000 guests (google/apple/salesforces parties, etc...) we are treated even poorly, we dont even care 15min breaks and our staff mail is hot dogs, we cant even taste or eat leftovers from the guests it goes directly to the garbage. I worked at a high end golden state warrior charity fundraiser where the main chef forced one of the staff to pick up lettuce from the trash to make extra plates of salad because we ran out of lettuce to complete the 200 guests sit down event, this was one of the worst thing i have ever seen. From my experience, small people doing all the work behind barely get recognition, waking up 4:30am making in the venue to set up and getting out at 9-10pm never got a raise, or anything. during the pandemic the campanies basically fired all staffs then begged us to come back to get pay $18hr.. i took the time to go back to school and im now studying to be a programmer, i will never go back to the culinary world. The only good thing that came out of my experience is that i can cook food better, i know when to avoid eating salads, etc... in all the companies i worked for, none allows staff to wash the greens, we just chop and goes direct to plating. Culinary in the US is very different from Japan.
@@Helryth its labor work, but we are treated poorly and companies get away with because they were able to lobby the government this is why most of the people in the hospitality industry quit their jobs, we have no benefits, some works "at will" (this mean the company can fire you whenever, this is what happened to me in the pandemic and then they came begging with emails asking if we want to come back, no mentioned of new pay or changes....) I worked for very high end catering companies (we cater for major tech google, apple, microsoft, salesforce, netflix, etc..) these parties that we do for these companies are massive (year end parties, launch, etc...), this mean the catering companies will push workers to work harder, sometimes we are not given 15min break. It's barely mentioned, if you're BoH you're on your feet working... the kitchen managers/chef the cuisine, etc... they take breaks but the low paying staff just work. I'm glad I decided to quit, hated every min of it. Especially being mistreated by a few of the "professional chefs" are are very snob to prep/line cooks that don't have a culinary degree.
I love how people are always so polite and happy in these videos. In this one you can particularly tell how the owner loves his daughters and fishing! 😁 His whole face just lit up when you asked about the lure and was very eager to show his certificate/award.

The size of the chicken katsu looks very filling, it would also be good w/ a plate of rice and a good curry sauce or a good tonkatsu sauce. Alot of these dishes are eaten along w/ food cooked at home, but they are also good on their own as appetizers if you're drinking beer or sake.
Now I want to add this shop to my next Tokyo trip, take a photo with the owner and his storefront and proudly say that Paolo is making your shop go viral. This video is super cool and the storytelling is 💯 I guess one secret to success is loving what you do 👍🏼

Amazing... I mean, I'm almost having a heart attack here xD, but you can clearly see with videos like this one that it's these types of businesses with people working so hard throughout the day that really connects communities in Japan. A whole bunch of Paolo's videos in these restaurants, bars and shops it seems the reasoning for opening the place connects to something about the community. People say they don't like frying stuff at home, I'll fry them myself and sell it for their convenience. I wanted to provide cheap plentiful food. People like me remember this food from their childhood, so I wanted to offer it. Lots of people working in the area needed a quick fill me up, so that's why we do it. I have a real admiration for that sort of attitude from Japanese small business owners... it's the connective tissue that makes Japanese culture so incredible.
I think one of my favourite segments in this series is when you interview with the locals / customers. Feels really cool and genuine to hear their opinion of the shops
This sounds perfect for so many living in urban environments. A bag of goodies from this shop, cook rice at home, prepare a salade and some miso. Boom, you have a nice meal. I love it!

Reminds me of when I was younger and worked in the kitchen at a Japanese restaurant. I was in charge of shelling 500 shrimp a week and making all of the shrimp tempura and seared salmon for the sushi bar. It was hot, but fun work! 😁

Okay, odd but honest review: I really enjoyed how you dubbed over your own voice in English during the interview and kept their responses in Japanese. I watch subtitled content the majority of the time, but it can be a bit difficult to get things done while having to read subtitles. Really enjoyed how you used both English narration in your half, and just the subtitles for the Restaurant Owners; I felt like I was able to multitask while reading when I needed and listening when I could. It helped my personal retention as well, as I wasn't frustrated I was missing anything, so I watched to the end. :) I've never seen that before -- I liked it. 👍
I was always wondering why he doesn't include his questions in the original audio, but I guess that does make sense. I'm sure it takes a lot of effort to go through the process of dubbing over every question in English, so props to him for doing that.

Amazing... I mean, I'm almost having a heart attack here xD, but you can clearly see with videos like this one that it's these types of businesses with people working so hard throughout the day that really connects communities in Japan.
A whole bunch of Paolo's videos in these restaurants, bars and shops it seems the reasoning for opening the place connects to something about the community.
People say they don't like frying stuff at home, I'll fry them myself and sell it for their convenience.
I wanted to provide cheap plentiful food.
People like me remember this food from their childhood, so I wanted to offer it.
Lots of people working in the area needed a quick fill me up, so that's why we do it.
I have a real admiration for that sort of attitude from Japanese small business owners... it's the connective tissue that makes Japanese culture so incredible.
Man i wish this place was in my neighborhood, i would go every day.
I think one of my favourite segments in this series is when you interview with the locals / customers. Feels really cool and genuine to hear their opinion of the shops

This sounds perfect for so many living in urban environments. A bag of goodies from this shop, cook rice at home, prepare a salade and some miso. Boom, you have a nice meal. I love it!

Reminds me of when I was younger and worked in the kitchen at a Japanese restaurant. I was in charge of shelling 500 shrimp a week and making all of the shrimp tempura and seared salmon for the sushi bar. It was hot, but fun work! 😁

Okay, odd but honest review: I really enjoyed how you dubbed over your own voice in English during the interview and kept their responses in Japanese. I watch subtitled content the majority of the time, but it can be a bit difficult to get things done while having to read subtitles. Really enjoyed how you used both English narration in your half, and just the subtitles for the Restaurant Owners; I felt like I was able to multitask while reading when I needed and listening when I could. It helped my personal retention as well, as I wasn't frustrated I was missing anything, so I watched to the end. :) I've never seen that before -- I liked it. 👍
I was always wondering why he doesn't include his questions in the original audio, but I guess that does make sense. I'm sure it takes a lot of effort to go through the process of dubbing over every question in English, so props to him for doing that.

I agree it’s really nice to see their varied interests too, though I don’t know if the lady is middle-aged, considering her kids re the same age as the owner.
Also not sure why “diverse” is in quotation marks but I do agree it’s nice to see people with different interests together.
