I’m from Brownsville. I grew up on elote and taquitos. Great dishes. I do my version of a lazy elote with canned corn. Drain the corn and toast it on a skillet with some oil. Get it nice and toasted then season with lemon pepper salt. Let it cool and add all your toppings. I could eat it everyday. Love the content!! 👍👍

Last year I had Elote from a street vendor at the tamale festival in Somerton, AZ. They roasted the corn on an open vertical flame, sort of like how you roast meat for Al Pastor tacos. I've never seen it done that way before. It was great.
I LOVE Elote so much---I used to grow a few stalks of corn just so I could make elote out of every ear! The guy who showed me how to make it roasted the ears whole in the husk, by digging a hole and dumping coals from his grill into it, a light covering of sand and then the ears, then burying them and he even tamped it down with his foot. Then almost an hour later he dug them out, carefully rinsed them off, shucked them and made elote. Now, I never buried mine, I just grilled them ON the grill *LOL* but I grew up in WI and grilling ears of corn was not new to me, just all the fixings. I have kinda messed with seasoning corn in a similar way but your video is a game-changer for me in that regard. THANKS!!!
That looks so delicious! A lady I used to buy from put corn on Doritos with this creamy mayo sauce and I crave it all the time. I may have to try one of these!
Dorilote is fire asf, when i visit Mexico, specifically Guanajuato theres corn vendors that sell a huge variety of corn served on the cob, in an esquite, as dorilote (theres also with takis cheetos or tostitos) and theyre all amazing
I remember a guy that had an old ice cream cart bicycle that would ride around the neighborhood selling elote. Helados? No! Elote! One of my favorite memories was my 4 year old son, me and my dad sitting on my parent's porch eating corn from the same guy that had been selling it for decades. Elote is a staple in my house still. My very white wife even learned to make it in my absence. She doesnt cook, but she makes elote

Add lime juice to mayo, slather mayo on husked corn, shake on Tajin (sweet chili powder and lime juice crystals), *blacken* on the grill, return to mayo pool in tray to rest for a minute. This method revives and plumps back up even older picked more starchy corn...make sure to blacken that mayo! the more the better!

At the Del Mar fair in San Diego they have a huge stand with wood grills grilling corn on the cob cob with the skins still on.. they would peel it down when it is fresh off the grill and you can get it with butter and Parmesan!!!
