Grew up in the Boyle Hights/East LA area in California...papas con chorizo was a neighborhood favorite! I will be trying this...I know it will be a hit. BTW I grew up thinking that spaghetti with a chorizo sauce 😋 was how EVERYONE made spaghetti!! Its delicious!❤❤😊
Miss the TX breakfast tacos. Had some leftover smoked chuck roast so I replicated your taquitos with that, top notch and simple. Thanks for showing how to do the tortillas, really helped me there. Keep them coming!
I love this new format. You seem focused, and really mellow. I like the calm demeanor. Smashed potatoes have been a favorite at my house for 20 years. I'm totally going to try them with the chorizo! Nice spin on papas con chorizo!
I have never found chorizo to my liking, but i'm willing to try it again for these. I came over from fb. I've followed you for a long time but after trying and succeeding recently at pasta and taquitos, i'm trying to branch out more to teach my toddler. You had me at fried potato. Idk why i stopped watching your story but i agree with other comments that your chill demeanor is pleasant. Maybe you just grew up? Lol. You seem more genuine and professional at the same time, which is impressive for a content creator. I also liked that you didn't edit out saying "ungins" (i did that as a kid) and dropping the chorizo. Authenticity will go a long way, and so will fried potatoes! Thanks for your your different take on the beautiful chorizo con pappas. For anyone in Arizona, Denmark Foods Arizona Fresh Pork Chorizo is really good. Not too fatty and has the perfect heat. Sold at Fry's and Sprouts. It's the best I've found when I'm too lazy to make my own. ☺️💞

I love chorizo on pretty much anything, my ex-gf would make huevos con papas, chorizo y queso for breakfast all the time and it was delicious. I will say sides, sides, and more sides... I just discovered your channel yesterday and quickly subscribed after watching a couple videos.
A whole new presentation worth trying out... I've always (the few times I've done it) cooked it with the papa in a small dice, fry them up then add the chorizo. My wife will definitively love the fried onios. BTW sides, sides, sides~

I'm from San Antonio and we got a place that does the giant taco too, but ours is called Rolando's. Also Charro beans must strictly be a Texas and Northern Mexico thing. I made it as a soup for a job I had in Alaska with a Chef from San Fran and he'd never heard of it. I've actually got 2 quarts in my freezer right now.

Ballpark time for the potatoes in the oven?
Depends on the size. For my mini Yukons it was about 45 min at 375°F. Check with a knife if it comes out clean it’s good
