    Finally someone who cooks salmon properly! I don't cook salmon by time but by sight (cook it skin side down until the bottom 65-70% has turned white, then flip, once the white parts touch give it another 10-20 sec), and I think mine is even slightly less cooked than yours. It stays so succulent and flavorful when you cook it like that. In restaurants salmon is often overcooked for my taste, it becomes way to firm and dry then.

    I found the same method taught by a British chef many years ago on TH-cam too. I used to call it the 313 method (3 minutes on skin side, 1 minute on the other side, and 3 minutes off heat). Of course, it all depends on the thickness and the timing should be adjusted accordingly.

    Gabie do you remove the scales from your salmon?? ❤️

    • @DoDo-lr7xf
      @DoDo-lr7xf 2 ปีที่แล้ว

      Don’t think so, watch at 2:55, the scales were still on and made the cracking sound, crunchy with the scales plus the one you get at the store has the scale on anyway unless you get a fillet

    • @ambm240
      @ambm240 2 ปีที่แล้ว

      @@DoDo-lr7xf Ahh I see that, thanks for pointing that out. I was confused because I was always taught to remove the scales, but I can’t get a crunchy skin no matter what I try. Do you think the Scales help with a crunchy skin too then?

    • @DoDo-lr7xf
      @DoDo-lr7xf 2 ปีที่แล้ว

      @@ambm240 yes depends on the fish, the scale on other fish is big and hard that’s why you want to remove it, with salmon, the scale is tiny and softer that why they don’t remove. With the scale on helps with the crunchy skin too. If the scale has been removed from the fish then you have to fry longer to get all the water out of the skin to get it crunchy but also overcook the meat or cook uneven on one side.

    • @ambm240
      @ambm240 2 ปีที่แล้ว

      @@DoDo-lr7xf thank you so much!! This was so helpful. I didn’t know the scales were edible, I won’t be as vigilant in removing them entirely, I will try it though without removing the scales and see if that helps with getting a crispy skin. Thank you again! You know your fish well 🥰

    • @DoDo-lr7xf

    Gabie do you have any advice to cook salmon to have a less pinkish Center. My parents tend to complain that it seems raw. Also, when you placed your spatula is it to prevent it from curling. I normally do shallow cuts on it to prevent it, is it due to me cooking of high heat instead of the lower heat settings that you used. Thanks I’m advance.
