Cajun & creole is not simply "fancy or home cooking" when distinguishing . Cajun derives from the Acadian a French-Canadian Catholic colony that moved to Louisiana after being expelled, while Creole is a mix of Spanish French & West African Native people mixing bloodlines and culture. They both have distinct Foods ranging from high end to rustic.

Sort of Cajun didnt really become a thing until much a
Later. A Creole is basically just a native born Louisianan. Most people are a big gumbo of ancestry now. But Cajun is specifically a descendant of Acadians from Nova Scotia. En Francais Acdyan Acajan cajan Cajun. (Those are my attempts at phonetic spelling) I highly recommend the documentary. Finding Cajun. It's very interesting.

Just a quick FYI : does anyone know where Cajun ancestry originated from?
Nope not Canadian native indians but the Cajuns originated from Canada, Acadia to be exact thus the Fleur De Lis.
The symbol is a legend in itself - a lasting emblem of royalty, power, honor, grandeur, faith and unity. It is written that an angel descended from heaven with the Holy Ampulla in the shape of a fleur-de-lis when King Clovis of France was proclaimed. It thus signified the French kings' direct link to God.
Cajuns are the French colonists who settled the Canadian maritime provinces (Nova Scotia and New Brunswick) in the 1600s. The settlers named their region "Acadia," and were known as Acadians. In 1713, the British took over Canada and expected all settlers, including the Acadians, to defend the kingdom. The Acadian story begins in France. The people who would become the Cajuns came primarily from the rural areas of the Vendee region of western France. In 1604, they began settling in Acadie, now Nova Scotia, Canada, where they prospered as farmers and fishers. Most Cajuns are of French descent. While Lower Louisiana had been settled by French colonists since the late 17th century, the Cajuns trace their roots to the influx of Acadian settlers after the Great Expulsion from their homeland during the French and British hostilities prior to the Seven Years' War (1756 to 1763).
