Hi! Yes, any type of light-flavored oil will work. Don't use a strong-flavored oil, like extra-virgin olive oil because it will affect the taste. Pureed sweet potatoes would work very well in place of the pumpkin. Enjoy! :)
If you do the cake like I did with the 'naked' look. If you want to add a generous amount of frosting on the outside, you can prepare 1 1/2 portions of the recipe :)

Hi! I just put my pumkin or squash in the oven. Cut it in half or smaller pieces, depending on the size, and put it, if possible, cut size down on a baking sheet. Put it in the oven at 200°C until it is soft (test by pricking with a fork). Then, let it cool. Depending on the type of pumpkin, put it in a blender with or without skin and blend until smooth. If I don't use it all at once, I put it in ziplock bags and write the weight of the portion on it. By flattening out the puree in the bag, I can easily cut off the portion I need when it's frozen with a knife that I ran under hot water.
You may try praska, pumpkin pirog, pumpkin Turkish borek, pumpkin mucver recipies all of this about pumpkin is available on my youtube channel and blog.
