When i was a young boy in the 70’s my best friend was the son of an American Korean War veteran and Korean War bride. She passed away from breast cancer when I was 12. I never appreciated her cooking due to being young and a picky eater but I’d love to go back and learn from her. She was a sweet lady. I made this and it was fantastic!!! Using that small amount of liquid mixed with the flour for the second dip is a GAME CHANGER! I’ve always just done two flour dips and thrown remaining flour out but this makes so much freaking sense and the crispy coating is perfectly thick and crunchy and not thin or falling off. Letting the chicken sit in the marinade for 24 hours makes the meat fall off the bone tender too. Thank you for sharing your secrets

I was stationed in Korea a very long time ago on the DMZ in 1970. I have to say that I had the best fried rice I have ever eaten in my life and I have yet to find any restaurant that can make it like I had. This chicken looks very nice and I'm going to make it. Thank you for this recipe! I made this today and it was SO good!! Crispy on the outside and juicy on the inside and beats all of the fried chicken I've eaten in Seoul. I didn't have garlic powder on hand so I switched it with half a chicken bouillon, and milled it into powder with the onion powder. It tasted amazing, I ate 9 drumsticks by myself. We got two chickens at our local Sams and my husband and I each cut one chicken following closely your directions. And voila! Now the chicken is marinating till tomorrow. We can't wait!!! As for the GoChuJang recipe, most Koreans buy it because making GoChuJang is an art form that requires so much attention to detail and time. It needs to ferment for at least one year before it reaches it ideal fermentation. My mom makes small batches for fun, but doesn't have the depth of flavor because it wasn't fermented, outside in a claypot, for at least a year. If you go to the country side of Korea, many older generations/grandmothers make their own GoChuJang, Soybean paste, and soy sauce, along with other super delicious fermented veggies and sauces. These are bar none compared to the store bought ones. Anywhoo, I don't have a GoChuJang recipe because I know that I don't have the means or skill set to slow ferment the Korean Red Pepper Paste in claypots, outside, and nurture/tend-to during all four seasons🤪 Just buy it at any Korean market or order it online at www.modernpepper.com/store

Oh my god! This recipe is so good. I normally hate a checken breath. I was lazy to finish cooking on the same day, so I ended up left all marinated around 22 hours. It is all so crunchy outside and juicy inside. Even checken breath is not dried or too hard to swallow at all. You are my angel 😇. I couldn't believe I can make myself a fried chicken that much better than any commercial franchises. So proud of myself and thank you so much to share and walk us through all the way. Your' cooking shows never cease to amaze me! When other people win the lottery, they buy big houses and cars and jewelry and such. One of the first things I would do if I won the lottery would be to meet Mrs. Helen in person and go Korean grocery shoppin with her and watch her make an amazing feast! I would pay her 1 million dollars for her fried chicken, extra spicy please Mrs. Helen! I always get inspired by watching your shows but at the end of the day its never going to be authentic because I'm making it! If I get elected for President I promise to have more Korean BBQ and Korean restaurants in general in the US!
Hi Mike! Aww...you are so kind🙏 But I disagree that you cannot make authentic Korean dishes. If one learns the ways of authentic recipes, it doesn't matter if one is Korean or not. Actually, some of my Korean friends are the worse cooks, especially when it comes to Korean food. And my parents' and aunts' restaurants, the kitchen staff that bang out authentic Korean dishes are not Korean. It is because the head chef and the chefs they worked under trained them well to make hands-down authentically delicious Korean dishes. From your lips to God's ears....one day, Modern Pepper will be "big" enough to host fan meetups and in-person cooking seminars/tours🙏
You're correct. How can there be dislikes. It's delicious, but i think I know why there "dislikes"; it's the non-traditional seasings/spices she added (Chinese 5 spice & oregano). But if they paid attention, she uses the word "fusion" in her cooking description. Go figure, there are many unhappy people in this world. Helen is delightful.

Hi Arina👋. Thanks🙏 I know what u mean about the frying oil. I usually try to fry more stuff with a few days OR once the oil cools down completely, using a fine mesh filter, I filter the oil. Then I store the oil in an air tight container or glass jar and store it away in the cabinet. Generally, u have a short window to reuse the fried oil again (a few weeks at most). If u let it sit for awhile, it will start to develop that food residue odor. I don’t know if you saw my fried chicken wings or the corn dogs recipes. U can always fry them and freeze them (double/triple bag them once it cools down). For the corn dogs, I would wrap them individually with plastic wraps then into the freezer bags. You can reheat them frozen wings and corn dogs in the oven at 325 Fahrenheit (try to lightly defrost them in the microwave first). For the wing sauces, make them when u r reheating the wings in the oven. I made this and it was fantastic!!! Using that small amount of liquid mixed with the flour for the second dip is a GAME CHANGER! I’ve always just done two flour dips and thrown remaining flour out but this makes so much freaking sense and the crispy coating is perfectly thick and crunchy and not thin or falling off. Letting the chicken sit in the marinade for 24 hours makes the meat fall off the bone tender too. Thank you for sharing your secrets

I was stationed in Korea a very long time ago on the DMZ in 1970. I have to say that I had the best fried rice I have ever eaten in my life and I have yet to find any restaurant that can make it like I had. This chicken looks very nice and I'm going to make it. Thank you for this recipe! I made this today and it was SO good!! Crispy on the outside and juicy on the inside and beats all of the fried chicken I've eaten in Seoul. I didn't have garlic powder on hand so I switched it with half a chicken bouillon, and milled it into powder with the onion powder. It tasted amazing, I ate 9 drumsticks by myself.

I’m definitely going to try this! I make fried chicken now but your secret tip of making the extra crumb mixture adds another dimension. I would have never thought of that. I’m going to have see if I can find the red pepper paste. Maybe you have a recipe for that too? 😉

As for the GoChuJang recipe, most Koreans buy it because making GoChuJang is an art form that requires so much attention to detail and time. It needs to ferment for at least one year before it reaches it ideal fermentation. My mom makes small batches for fun, but doesn't have the depth of flavor because it wasn't fermented, outside in a claypot, for at least a year. If you go to the country side of Korea, many older generations/grandmothers make their own GoChuJang, Soybean paste, and soy sauce, along with other super delicious fermented veggies and sauces. These are bar none compared to the store bought ones. Anywhoo, I don't have a GoChuJang recipe because I know that I don't have the means or skill set to slow ferment the Korean Red Pepper Paste in claypots, outside, and nurture/tend-to during all four seasons🤪 Just buy it at any Korean market or order it online at www.modernpepper.com/store

Hello,so this is korean kfc :)) I am from Czech republic(middle europe),here live many Korean people and we have korean shops here and right now I have ordered some things for preparing this recipe,the soy red pepper paste is the most important i think :) it will be sure dellicious.When i was a child,my parents did fried chicken pieces,but simmply only salt,black pepper and flour,eggs and breadcrumbs,but this your recipe is really nice.Hmm and Korean women are pretty :)

Oh my god! This recipe is so good. I normally hate a checken breath. I was lazy to finish cooking on the same day, so I ended up left all marinated around 22 hours. It is all so crunchy outside and juicy inside. Even checken breath is not dried or too hard to swallow at all. You are my angel 😇. I couldn't believe I can make myself a fried chicken that much better than any commercial franchises. So proud of myself and thank you so much to share and walk us through all the way. Your' cooking shows never cease to amaze me! When other people win the lottery, they buy big houses and cars and jewelry and such. One of the first things I would do if I won the lottery would be to meet Mrs. Helen in person and go Korean grocery shoppin with her and watch her make an amazing feast! I would pay her 1 million dollars for her fried chicken, extra spicy please Mrs. Helen! I always get inspired by watching your shows but at the end of the day its never going to be authentic because I'm making it! If I get elected for President I promise to have more Korean BBQ and Korean restaurants in general in the US!
Hi Mike! Aww...you are so kind🙏 But I disagree that you cannot make authentic Korean dishes. If one learns the ways of authentic recipes, it doesn't matter if one is Korean or not. Actually, some of my Korean friends are the worse cooks, especially when it comes to Korean food. And my parents' and aunts' restaurants, the kitchen staff that bang out authentic Korean dishes are not Korean. It is because the head chef and the chefs they worked under trained them well to make hands-down authentically delicious Korean dishes. From your lips to God's ears....one day, Modern Pepper will be "big" enough to host fan meetups and in-person cooking seminars/tours🙏

You're correct. How can there be dislikes. It's delicious, but i think I know why there "dislikes"; it's the non-traditional seasings/spices she added (Chinese 5 spice & oregano). But if they paid attention, she uses the word "fusion" in her cooking description.

pickled raddish was amazing! about oil - do you use the oil afterwards? such a great amount - too pity to loose
Hi Arina👋. Thanks🙏 I know what u mean about the frying oil. I usually try to fry more stuff with a few days OR once the oil cools down completely, using a fine mesh filter, I filter the oil. Then I store the oil in an air tight container or glass jar and store it away in the cabinet. Generally, u have a short window to reuse the fried oil again (a few weeks at most). If u let it sit for awhile, it will start to develop that food residue odor.
I don’t know if you saw my fried chicken wings or the corn dogs recipes. U can always fry them and freeze them (double/triple bag them once it cools down). For the corn dogs, I would wrap them individually with plastic wraps then into the freezer bags. You can reheat them frozen wings and corn dogs in the oven at 325 Fahrenheit (try to lightly defrost them in the microwave first).
For the wing sauces, make them when u r reheating the wings in the oven.
