I tried your recipe but my hometown doesn't has bay leaves and spicy bean paste, so I used shadow-fried chilli paste instead and not put the bay leaves in. However the smell of hotpot is so nice and so delicious 😍 thank you

What you have presented is excellent for a more traditional hot pot. May I humbly request a meat and oil free alternative as well. Living in China for 5 years now and following a whole food plant based regimen, while the available food is indeed great if one eats meat and (LOTS OF) oil, the notion that many have that vegetarian/vegan options are actually commonly available (unless one cooks) is simply a fantasy.
