    I grew up watching bananas in pajamas! It definitely influenced the name, plus I couldn't think of a better name for a cocktail that uses the pajamas of the bananas as a key ingredient in the cocktail. Thanks for the video Leandro! Appreciate your support.

      Most infused syrups will start losing flavor after 1 - 2 weeks without additives, always keep refrigerated and taste before usage . The higher the sugar content, the longer it stays.

      So I did what I do for my simple syrup. I add about 1.5 to 2 oz of vodka to make it last longer. My simple syrup usually lasts for a few months this way, I'm hoping the bananas syrup will also last this long.

    Just made it. The banana peel probably could have sit longer for my syrup, only did 5 hours as you can see, but it is still good and has a hint of banana. It's like a really super nice daiquiri with all kinds of flavors going on. My wife loved it and hates banana drinks. She could still taste the banana though so was a hit. Gonna go make another while the pork butt rests...... Cheers! OH, Happy Memorial Day!

      Fat washing it would be fine I’m sure, there would be some variation so you’d have to taste through but I think it would be pretty minimal depending on the rum you use

      I tried it with some cheap Bacardi and I couldn't believe how much coconut flavor came through! But I also found that I needed to up the syrup to ¾oz to balance the flavor. I also think I'm going to increase the banana peels to 4 in making the syrup.

    Hey Hello , i do a similar cocktail with banana peels demerara sugar syrup , lime , coconut oil fatwashing Ron , 2 bitter choco dash , and torch a banana slice with sugar and angostura for a garnish . almost caramel i think.. , name Banana Republic , sorry for my english , i love how you teach and your passion for this.

    I made this one, according to directions except that I used 2 oz rum instead of 1.5. I didn't find the banana very striking, but I thought the drink as a whole is notable because of how the coconut rum comes off much better than in any other drink I've had with it.

    Great video, I want to make this and the syrup. Noticed a lot of sugar in the pan that didn't dissolve. This is essentially banana peels in rich syrup with cinnamon, wouldn't it be better to make rich syrup and let it cool to help dissolve better? Or would this be too sweet having much more sugar in syrup? Thanks for the great, informed content!

    Maybe you said you didn't like Coconut Rum becasue you were thinking mainly at Malibu? I am not crazy about that either. I did not know this Clement one ( I know thei magnific Rhum Agricole), do you think a higher proof coconut rum such as Koko Kanu would work the same?

    Just tried this, and the banana was lost to me, even though I know it’s in. I used Bacardi 3yr and Malibu, since that was what I had on hand. After upping to .75 banana syrup it tastes through and in my opinion balances the drink really well. Really nice drink. I’ll be enjoying these for a while.

    How do you fat wash rum to make coconut rum?

      To fat wash rum take 300ml white rum and add 2 Tablespoons extra virgin Coconut oil. Melt the oil add to rum let sit at room temp for an hour then add to freezer for a few hours until coconut Is fully frozen (use a wide mouth jar or container) and extract hardened oil.

      @@GrizzAxxemann A lot of pesticides are rather hydrophobic and don't really wash off. Then again, a lot of pesticides are hardly harmful in the quantities that remain on the fruit, they're meant to kill bugs after all, not people. Do what makes you feel right I say. If that's rinsing your banana peels, or buying pesticide-free bananas, that's fine. Also, reminder that organic and pesticide-free are two different things as there are plenty organic-compatible pesticides.

    I'm 100% onboard with sustainable ingredient creation! But since I don't have any bananas lying around, and would in fact be buying bananas *just* to make this syrup (which ultimately seems wasteful 😄), I'm wondering how different the actual flavor of the syrup is from say banana liqueur. Obviously the alcohol element in the liqueur changes things a bit, but I'm more concerned about the comparability of the flavor. You only say "coconut and banana flavor" for the drink, so it makes it sound like the syrup just tastes like banana... which is great from a sustainability perspective if you don't have to need to use whole banana to get that flavor, but otherwise seems unnecessary to make.

    I guess they couldn't name the drink "bananas in pyjamas" for copyrwrite reasons. (bananas in pyjamas is a classic Aussie kids TV show)

      I'd think that'd be a trademark issue, not copyright. Bananas in Pyjamas obviously has the trademark on using that name for a kids TV show, at least in Australia, but I doubt it's sufficiently creative to warrant copyright on those three words in that order. I think titles in general are not protected by copyright but by trademark at most. There must be hundreds of books, movies and other creative works sharing titles with others.

      Either way the drink was named by it's maker Kim Stodel and it is definitely Pajamas...He is South African though, so maybe it is named for the Aussie show...I'll ask him!

    My only issue with this drink for a 'sustainability' perspective is the amount of sugar and water that is produced for one drink, and that there is not much syrup being used for the amount the recipe recommends to make. That's quite a bit of energy consumed for an ingredient that won't be used often, or is not commonly used. It could be a nice idea to do another episode using the banana peel syrup so that the syrup doesn't go to waste, as syrups only generally last up to 1 month if stored correctly. OR just half the recipe to make less next time, and it won't all go to waste. Just my two cents. Sounds like a delish drink though! It would work well in a bar that uses the syrup often, but maybe not for the home bartender.

      The point is to scale up and down however you see fit and like all ingredients use what you make. I like to feature the original specs for syrups intended by the maker so you guys have all the info. You'll be pleased to know that I have made SEVERAL banana Daiquiris with the syrup and used the rest in my banana bread. It was all used up. plus I made the syrup from peels of Bananas I was using to make bread anyway :)

    The fact that Marius is unable to pronounce bananas in pajamas correctly like as in it's supposed to rhyme kind of bothers me.

    Don't get me wrong...I love cocktails and all the rituals that go with the making of them, but any discussion about "sustainability" and cocktails that doesn't begin and end with the 1/2 pound or more of clear ice per drink that's trucked across 2 counties to get to the bar is laughable. Growing some herbs in a 10 x 6 box in the parking lot doesn't really cover that.
    It's never really been a sticking point for me, but let's not pat ourselves on the back too much for using old banana peels.
    We'll mix our cocktails and enjoy them. If the carbon footprint starts to bother us, we should stop. Virtue signalling doesn't salve anything but our conscience.
    I suppose this rant is really meant for society at large and how we react to many of the issues plaguing us, but this is my particular interest at the moment so I thought I'd comment here.
