Two suggestions: 1) The Sidecar. 2) The Vieux Carré Germans also have a version of Irish Coffee called Rüdesheimer Kaffee, made with brandy (Asbach if you're being really authentic) that's worth looking into. Just some suggestions from left field.

I like to make the paloma as a spritzer with 2oz of repasado (as its my tequila of choice) .5oz of simple syrup or agave syrup if its on hand 1oz of lime juice fresh squeezed of course 4oz of grapefruit juice And i top the glass with no more than 7oz of seltzer water more often less based on the glass and garnish with a lime wheel. Its fantastic on a hot summer day

La Paloma’s origins that I’m familiar with come from a tradition of taking a shot of tequila and following with a shot of ruby red grapefruit soda. I worked at a Mexican bar with kitchen staff from Jalisco and Oaxaca who both separately provided that same story. Our Paloma was: 1.25oz Blanco Tequila 1oz Grapefruit Juice .75oz Lime Agave syrup Top with Tamarind or Grapefruit Jarritos Soda Serve in a rocks glass with a Tajin rim and slice of grapefruit. Won best cocktail in Mobile, AL last year :)
I added this to my favorites! The Matador and the Mendicina Latina look like some cocktails I would like!! El Diablo is my favorite tequila cocktail right now!

I’d make it once a year and be let down. Your corrected version gave me insight into why I didn’t like James Bond’s recipe. Your version is on my to do list. Main reason I bring up the Vesper however lol is how much you’ve up’d your game since then. Marius may have a small part in that. Regardless great job.

Yes, big time, reposado is a lot softer, and the agave flavour doesn't hold up as well in cocktails as Blanco tequila does. The barrel notes from reposado tequila work perfectly in some cocktails like a Tommys margarita or a yellow jacket, but to hold up against the campari in a siesta, for example, Blanco is irreplaceable.

Mt. Dippity Dew: 1.5ml Blanco Tequila, 1 can full-sugar Mt. Dew, 1/2 cup granulated sugar & ice. Mix well. Garnish with a 4" perfectly thin hotdog sliver. Refreshing!
In the “matador” can chartreuse can be replace with midori?
For color maybe, chartreuse and midori taste nothing alike.

Why do you always double strain? What is the advantage?
The small chips of ice that result from shaking quickly melt and dilute the cocktail. The large rock of ice in the glass melts much more slowly.
