Homemade vegetable broth without chemicals - all the tips to get original taste

    The first thing I want to tell you is: Don't have a prejudice like me that these home-made cubes cannot be the same as the original ones that you buy in the supermarket.
    I really thought that, while these are certainly a healthier version of soup cubes, they still can't be like store-bought ones. Well, I was mistaken!
    When you use soup cubes made from this combination of ingredients, you will see that they taste the same as the ones you are already used to.
    I put these soup cubes in everything I used to add vegetable seasoning or soup cubes to.
    If you just melt 2 or 3 soup cubes in a little boiling water and add soup noodles, you will get a great soup in 5 minutes. I add cubes to meatballs, stews, risotto, whatever I want.
    Make these soup cubes yourself and I'm sure you won't buy them at the store anymore.
    Ingredients:
    4-5 carrots
    fennel
    celery root
    celery stick and leaf (several)
    parsnip
    parsley root
    leek
    kohlrabi
    2 zucchini
    two teaspoons of turmeric (WEAK)
    parsley
    turmeric
    olive oil
    10% salt
    Preparation
    Prepare the vegetables listed above, wash and dry them.
    The vegetables you use for these cubes should be unsprayed, from organic farming or best if you have your own.
    If you don't have any of the types of vegetables listed above, you can still make cubes for soup, but this combination above gives you the taste of cubes just like store-bought ones.
    When you put them in a dish, you won't feel like you put a healthier and more natural version of soup cubes.
    Start by preparing a large pan and putting olive oil to cover the bottom of the pan.
    First, chop the carrot into small pieces and put it in slightly heated oil. Stir and cover and simmer over low heat while you chop the leeks.
    Cut the leek, add it to the slightly stewed carrots, mix and cover.
    Continue to chop the rest of the vegetables and add them one by one while the ones already in the pan are simmering.
    For the end, leave only the zucchini and parsley.
    When you have chopped and put all the vegetables in the pan, except the zucchini and parsley, stew them for another 20 minutes on low heat.
    Add the chopped zucchini and simmer for another 5 minutes.
    At the end, add the chopped parsley, mix, cover and turn off the stove.
    Leave for 10 minutes.
    Prepare a bowl and a scale.
    It is very important to weigh the amount of stewed vegetables in order to know how much salt you need to add.
    Purchased soup cubes contain about 50% salt, while I put only 10% salt in these because I want to have flexibility and be able, if I wish, to put more cubes in the dish and get a more intense flavor.
    I got 1500 g of stewed vegetables and added 150 g of salt, i.e. 10%.
    Add two teaspoons of turmeric.
    Mix the mass with a stick mixer and transfer it over baking paper and form a square or rectangle, but take into account the size of your freezer drawer.
    Flatten the mass as much as possible and put it in the freezer for a few hours. Take the mass out of the freezer, flatten it further and cut it tentatively.
    You won't be able to cut the cubes completely after a few hours because they won't freeze enough.
    The next day, cut the cubes and leave them in a freezer bag.
    I kept the cubes prepared in this way for a maximum of 2 months in the freezer because I used them up, so I didn't have a chance to keep them longer.
