- Chef Kyo Pang of the NYC restaurant Kopitiam makes the beloved national dish of Malaysia: nasi lemak. A product of multiple ethnic cuisines within Malaysia, nasi lemak starts with a paste of shallots, garlic, dried anchovies. Next, Chef Kyo blends dried and fresh chilis, shrimp paste, tamarind paste, mixes everything together, and fries it all in oil. Then, Chef Kyo makes coconut rice with jasmine rice, pandan leaves, and coconut milk. i lived in malaysia for 5years for studies. First 2/3years, whenever i saw Nasi lemak ( usually comes in a banana leaf packet ) i used to have a feeling that i would throwup .. finally, one day i tried it out of hunger, very early in the morning. since then until i left i could never eat enough of it. I used to buy anything that says nasi lemak, even from Mcd , restaurants burgers, nasi lemak ayam ( chicken ) .. nasi lemak sotong ( squid ).. most delicious food ever, if i have to eat one dish , i could eat it and never get bored.. right now, came to watch this video, nd trying to have courage to make this dish..

Have to say that Malay cuisine is absolutely phenomenal on multiple levels.
Only ended up having Nasi Lemak before my flight out of Malaysia. Still craving it to this day 🥺

Malaysia is a multiracial country and Malaysian may not agree with each other about a lot of things but one thing they can agree for sure is nasi lemak. Everyone love nasi lemak in Malaysia.

I lived with some Malaysians in college, wonderful people, and I can honestly say some of the dishes have some strong flavors to them. I miss them now because you just don't find flavors that intense every day here. An amazing food culture in Malaysia and wonderful people.
They call police on you for cooking food that has intense flavour.

@@lenska_7507 there are a lot of variation of how to cook nasi lemak. This is the first time I see people pour coconut milk after the rice is already cooked. Usually we just cook the rice with coconut milk. Northern malay peninsular style put some spices like black pepper, cloves etc in the rice so it is more aromatic.

@@jusbeazy28 yeah their sambal is vegetarian so you can order the vege version with the rice, sambal, the peanuts... their's is the best nasi lemak i've ever had, half the reason being their sambal and half their fried chicken haha

I fell in love with this dish when I first visited Malaysia with the family for a wedding. It’s something I cherish as much as pizza.
grinding the ikan billis into the rempah before you tumis is pure genius
I believe its the traditional way. It makes the sambal so much fragrant and no soggy ikan bilis.
@@CatsInTheFridge It's more or less how we make it. Grind the anchovies and fry with blended chillies, onions and garlic a little of belacan and bruised lemon grass and asam jawa or asam keping. Salt and sugar
I'm a westerner living in Indonesia, I never did like anchovies before I started working here but fried ikan asin ("salted fish", Indonesian is basically a dialect of Malay) in fried rice is amazing. It's like a little ocean flavor bomb

From what I can tell the difference is almost analogous to British vs American English
@@seanwilson1922 Arguably Indonesian had a very different grammatical structure and a much richer vocab just because Indonesia has 700+ different languages. The comparison would be closer to cantonese vs mandarin than american vs british....

I personally eat it in Malaysia before and now back in the states my mother in law makes it all the time cause I did married a Malaysian. She’s the best thing that ever happened to me and the wonderful tastie Malaysian food has been a plus!! FYI that’s exactly how we make it at home ☺️

ORDER FROM KOPITIAM! The Malaysian white coffee (iced or hot) is amazing and yes, her nasi lemak is delicious. The shop is teeny tiny but I always look forward to it when I’m in NYC Chinatown ❤️

Kobayashi's Ego i think generally "cili padi" is kinda hard to find internationally. And thats the only one that is hard to come by fresh. But the others are easy to get in any store.

But just like she said, the smells of cooking it I couldn’t handle.
Trust me its da bomb but the most important part of the nasi lemak is all about the rice and the sambal (75% rice) ( 25%sambal) a good nasi lemak must have a very fragrant and mellow smell and taste to it, what it smells like is what it should taste like ( and must not be too herby or less herby and will be perfect) and the rice must be just a tad bit softer than al dente in texture and its must be in separated bits and must not be clumpy nor too soggy or sticky or even too soft and squishy the sambal must have a balance of sweetness,spiciness,umamimess and saltiness but the sambal MUST not be too sweet or else it will not be a *real sambal*

Americanized Nasi Lemak, it’s cool still. Need more exposure on Malaysian food. Feel the need to point out that despite Singapore “winning” the street food battle, they can’t touch our diversity. Mee Kolok and Laksa Sarawak from Sarawak, Sata, otak-otak and Nasi Dagang from Terengganu, Nasi Kerabu from Kelantan. You guys can’t touch us on purely the food level.

Though there is such a thing as sambal Ikan bilis (sambal with fried dried anchovies - what was made here), nasi lemak features the sambal and the anchovies as separate elements within the dish, not cooked together. Also for those who don't know nasi lemak, you need to have the smelly fermented shrimp paste and the tamarind in the chilli, without which you are not making the correct chilli for nasi lemak.

For the millionth time, nasi lemak means creamy rice not fatty. Omg.
HOLD UP! This is one of the variation of the nasi lemak. We don't usually eat it in a bowl nor mix the "sambal" with the anchovies and peanut. But holy shit this is the ultimate comfort food. Add a fried chicken , fried eggs, maybe roasted squid, some deep fried cow's lungs or anything. EVEN PORK CHOP! Nonetheless, put anything on it, and it will still become nasi lemak. ;)

This is the Chinese Peranakan (Chinese descendants) version of Nasi Lemak… For your information, there’s a dozens of ways and in fact every family have their own twist of this recipe..
I remember my late grandmother, she’s a Chinese descendants and her twist on the sambal is, she blend together the chilis with onions, garlic, lemongrass, galangal, and belacan(shrimp paste) …. It’s more like a nyonya version of it…

I'm not from SE Asia but I love nasi lemak. All the kinds I've tried had anchovy peanuts and sambal separately on the side. Plus I'm sure the coconut milk is added in the beginning. Is this a regional difference?
I think that's just her way of cooking nasi lemak. She's a baba & nyonya, so that might be their way.
