      Well,I'm from Africa too, Algeria and I don't see much of my culture in English videos. It seriously doesn't bother me. Africa in general is under esteemed. 🤷🏻‍♀️...I like this sandwich, it reminds me of my childhood, I used to make it with the leftover spaghetti with some sauce, but I didn't put eggs.

      We fry ramen noodles and egg so it becomes a sort of egg omelette ramen pizza type of thing in Malaysia. Its so good.

      My family has done this (not as a sandwich) with ramen for years. You don't need a second pan, just drain off _part_ of the water (let it set long enough for the water to cool _a little bit,_ not a lot), and promptly mix the egg in. Frequently scrape the sides (so that it doesn't get stuck & possibly burn), while letting the water boil until the egg all looks scrambled.
      I normally just mix in the flavor packet, because I'm lazy. The amount of water that you drain determines whether you eat it as a soup, or as an omlette.

    Awesomeness... More African recipes, please! When I lived in Sierra Leone they had interesting stews like Ground Nut Soup or Cassava Leaf stew. The cassava leaf was especially interesting. Made with coconut oil " the Mende way" and THREE kinds of meat; fish, beef and chicken! Great video today :)

    I’m currently a Peace Corps Volunteer in Cameroon and Spagoms are everywhere. It’s a go to meal for a lot of volunteers. The only difference that I’ve noticed is that a lot of people put the pasta in the bowl when they’re scrambling the eggs.

    This was 100% my fave breakfast as a 4 year old growing up in Cameroon. There was a man in a food truck on our way to church every Sunday who would make these and they were the HIGHLIGHT of my entire week every time. Since moving to the states, I never thought I’d ever see it again, but here I am. You did an awesome job!

    I’m Italian American and I always reheat and fry my leftover pasta and put eggs on top, I don’t usually scramble them because I like them poached over my pasta 😊😊

      In England they have a sandwich with french fries (inside as the filling), often with mayonnaise. It's called a "chip butty. It's not bad.

    In Malaysia we have this similar dish called Roti John.. it use the same egg mixture and the bread.. so delicious..!! So many option for this recipe..

      In Italy leftover spaghetti fritters are very common. I used to love it when my grandmother would make fritters out of leftover spaghetti and sauce.

    I do this all the time with ramen. On occasions I didn't have ramen around, I've used spaghetti. And I've never even been to Cameroon!

      Common in Italy also-frittata di spaghetti! Add in what you like-cheeses, some herbs, maybe some vegetable like zucchini, onion or tomato-and cook into a pancake kind of. Slice it for a picnic

    I'm Aussie and I make a varient of this too. I have since I learned the recipe in food tech in high school! I just use a cheap packet of 2 minute or instant noodles (or mi goreng instant ramen if I feel fancy), eggs and frozen mixed vegetables. You use the seasoning packets to season the egg in a mug, give it a quick whisk then pour it on top of the already made noodles in the pan. Then I put the Maggi seasoning sauce on top. Sometimes add cheese too.

    Thanks for making this video Emmy!! It is funny, but I am from cameroon and live in Germany now, and have been missing this spaghetti omelette but whenever I try to make it, it doesn't taste the same so I googled how to make it and here we are. Isn't funny that you are teaching a native how to cook his own food haha. Loved the video

    I made this for dinner tonight, and it was so good! I didn’t use Maggi (it has chicken in it, and I don’t eat meat), I just made my own seasoning with a bit of Thai dark soy sauce, a smashed clove of garlic confit, some onion powder, and a little bit of harissa paste (which is awesome, and I highly recommend it for anyone making anything African). I also didn’t have any peppers, so I just put in the onion and tomato. I ate mine on a flour tortilla with homemade spiced garlic aioli, and it was great!
    Edit: oh, and I added a bit of fresh chopped parsley on top!

    Oh wow Emmy, so surprised and glad to see an west african cuisine represented. I'm not from Cameroon but I guess that it tastes pretty good.
    And actually the maggi that you used (pronounced "maji") should be dry (not moist as you had it) because it will be easer to crush with your fingers and spread all over the dish (unless it's for a liquid thing and you're going to mix it after)
    And I suggest you to try it with some ketchup, it will be very good as well ^^

    When I was a kid, my older brother took whatever leftovers he could find and put them inside an omelette (spaghetti, steak, casserole, pizza, etc). This takes it up a notch stuffing it in bread. BRILLIANT!

    I’m from Indiana and when I was a child my grandma’s care giver (later she also helped raise me) used to make me fried spaghetti and eggs for breakfast. She’d take the left over spaghetti, already tossed in the sauce, put it in a skillet with a little butter and scramble in a couple of eggs. Sooo yummy! Though I also like it with an over easy egg so all the yoke gets mixed with the spaghetti. I have a lot of strange food combos I love but for once I did not come up with this one. I’ve made this in-front of my husbands family for breakfast and they were mostly appalled. They were also appalled over my PB, jelly and bologna on toast for breakfast lol 😂 which is my often go to breakfast snack. Thanks for all you’re awesome videos!

    My heritage is Italian and we make something similar called a frittata. You make an omelette using left over pasta with the sauce, so delicious! My partner makes noodle omelettes, you use 2 eggs and a pack of instant noodles. You beat the eggs, mixing in the flavoring in with them. Cook the noodles separately and then pour the cooked noodles into the egg mix, then cook. They're pretty good with soy sauce 🤤

      Adds some flavor. Alternatively, you can add some broth or stock. Just... not a brown broth.

    💕 That looks great ! They do have other spaghetti dishes where egg is added. Yeh, I think the bread would come in handy if you're trying to stretch out the meal. I think I'd pre-toast it in the oven before adding the pasta. And add a bit of parmesan ! Mmmm !

    Spaghetti fritters! My grandmother in Italy used to make them all the time with leftover spaghetti meals. But she used to cut them into triangles, like a pizza. We wouldn't break it up and eat it in a sandwich. One time I made spaghetti with broccoli rabe and anchovy paste and I had leftovers. So I mixed in an egg added some seasoned bread crumbs for extra flavor and made a fritter out of it. It was delicious!

    Anyone else grow up in an Italian household where Gma would take leftover spaghetti, sauce, some freshly grated parm and an egg; mix that up and pan sear it like that till the bottom got a lol rosey then put in the oven for a bit to finish off. Mine called it baked spaghetti, probably a way to use up leftovers but it was soooo good. This kinda reminded me of that. Fun dish Emmy, thanks for sharing❣️

    I do something similar with leftover Spaghetti that has the Tomato sauce already on it, I then add Mozzeralla and Parm cheese into the egg mixture, fresh herbs as well. It gets nice brown and crispy in the pan with the cheese, tomato sauce and oils and I cut it like Pizza slices, so good!

    I’m Cameroonian, this is my favorite breakfast dish. I mix the spaghetti and eggs in the same bowl and pour it in the frying pan. Just make sure you crush the maggi cubes. Good job.👌

    The high school students at my school have been doing something like this with their (traditional) spaghetti and meat sauce and garlic bread. It always seemed to smooshy too me, but with the noodles getting crispy in this dish, it looks pretty darn appetizing!

    In Algeria we have a variant of this snack called "frite-omelette". You just replace the spaghetti part with french fries. Delicious 👌🏻. It's obviously junk food, really loved by high schoolers and college students 😁

    One of my favorite ways to use up leftover spaghetti is to fry it up in a little evoo and butter until crispy, stir in a couple eggs at the very end with tons of black pepper and a little salt then hit it with parmesan cheese. So simple, so delicious. You can add whatever veg, seasoning, and fresh herbs as well. Ooohhh and spinach would be lovely. Very inexpensive meal and just tasty!

    I have been making left over speghetti omlete sandwiches for many years now. My brother who I care for loves cold spaghetti sandwiches (which bothers me just cause he doesn't reheat it). So I started very gently folding it (so as not to over mix the sauce into the mixture) into scrambled eggs ... which I fry exactly this way in a bit of salted butter. I add some mozzarella and parm at the end and it's so good, so easy and tasty even I get into it. Because there are already all the ingredients in the mixture there is no chopping or anything. Fastest hot lunch/brunch/dinner/snack ever... I am trying this though I like the meatless idea! Thanks for this Emmy (try my version on a hangover morning if you ever have one it makes life better)💖

    How very interesting! As a child my mother would always mix the sauce into the spaghetti and I would use that leftover spaghetti, meat sauce an all for sandwiches but never thought to cook eggs with it. I'll have to give this a go. It also makes for really effective hangover fair. Emmy, you're a very good cook and you follow directions really well which in my humble opinion is essential to becoming a good cook. You also don't seem to be afraid to try new things and that's how good home cooks educate themselves and become great home cooks. Your videos also have a calming effect which many, myself included take a fancy to. I know exactly how you feel not always knowing how something will turn out but I have the greatest confidence in you and your kitchen skills.

    My mom used to make us spaghetti and eggs with leftover spaghetti when we were little. It's a comfort food for me now. Easy to make and cheap.

    I take my leftover spaghetti, put it in a saucepan, add butter, put in the eggs and stir consistently until eggs are cooked. Then I add shredded cheese, I use whatever I have on hand. How butter, how many eggs and how much cheese depends on how much leftover spaghetti I have. Very yummy. 😋😋

    My mom would make spaghetti and egg with leftover spaghetti when we didnt have anymore pasta sauce. It was basically scrabbled eggs with spaghetti, salt, and pepper. So simple and so good.

    Wow!!! I've been making this for more than 20 years, whenever I have leftover pasta, and never knew it's a thing, always thought i invented it :)) No bread though, the pasta in it is more than enough. Love this!

    Cameroon must be right around the corner from Italy. ;) There a dish called Spaghetti Frittata is made. It usually doesn't contain vegetables, but lots of Parmesan and sometimes bacon bits.
