  • In this video, I'm featuring copycat RETIRO Beef Pares with tips and techniques so you can enjoy UNLI-PARES with the same rich flavors at home.
    Pares is a Filipino set meal which is typically found in diner-style roadside restaurant or stalls. It consists of Beef Asado or Beef Stew, garlic fried rice and clear soup. 'Pares' (which literally translates to 'Pair') was coined by Filipinos because the Beef Stew or Beef Asado is best PAIRED with garlic fried rice and clear hot soup.
    Ingredients:
    Beef Stew:
    750g Beef Brisket (you can also use Beef Tendons)
    6-8 cloves garlic chopped
    1 medium sized onions chopped
    1 small sized ginger chopped
    1 Tsp salt
    1 tsp pepper
    1/4 c oyster sauce
    1/4 c soy sauce
    1/4 c brown sugar
    3-5 lcs star anise
    2pcs beef boullion
    6-8 cups beef broth
    Beef bones(if available)
    Corn starch slurry
    1 tbsp sesame oil
    Beef Broth:
    Beef bones
    2-3 liters water
    Salt
    1 tbsp Whole peppercorns
    4pcs beef boullion cubes
    ***Leeks/chives and fried garlic for garnish

    oh Wow sigurado na masarap ito!!!natakam naman ako lalo kasi napanood ko ng buo kung paano mo ito niluto. Ang bagong ka-cravings mo sa araw-araw, nag-iwan ako ng 1 basket na puno ng berries, paki-balik na lang ka-cravings sa kastilyo ko ang basket.

      Pwede po, ang mangyayari non pork asado :) different laste than beef, less cooking time :)

    I couldn't get this right. I know the star anise is what brings out the aroma and flavour..The meat is so tender too..I have to watch it a couple more times, thanks for sharing!

      Hello! You can ask me if you are confused with anything :) you're correct with the anise and yes, slow cooking the meat is the key to fork tender beef pares :)

      Hindi naman sa pag compare, I saw a different video of the same recipe. Pero I think may point na i-saute yung star anise first para lumabas ung aroma. Similar to the roasting of coffee beans, though may oil involved, where the aroma and the flavors are to be incorporated into. Samahan na rin ng peppercorns, for more "kick" on the aroma. :).
      Would like to suggest na mas mabilis cguro if we incorporate a pressure cooker in the tenderizing process. Pero pag hindi available, we still have the usual slow cooking process on your regular pot.

    daming gumagaya sa pares retiro pero di dila makuha. sa tutuo Chinese ingredients kasi yung ginamit nila kaya di magaya.

      Sayo ko lang sasabihin ang sikreto 😅😅huwag kang gagamit ng Silver Swan soyce sauce ( maalat) use Japanese brand na toyo , yung unang kulo ng beef brisket tapon mo para di maamoy yung baka at para matangal yung scum..huwag mung igisa yung baka , pakulo lang with toyo ,onios, star anise at konting luya..ang secret ingridient CHINESE 5 SPICE mga isang kutsarita kung malaking kawali ang lutuan mo isama mo sa pakulo ng baka..at yung ginisang bawang + spring onions use it as toppings ..

      750 grams ito, so mga 6 to 7 servings papatak nyan
