As someone being proud of the foods of caviteno and a citizen as well my mom's version of calandracas is something i always seek in the rainy days even if its not in a funeral as mentioned in this video, still she cooks this everytime for me and my brother which i really love.

Calandracas from Cavite while I grew up in Leyte, kalanrakas is a variety of leafy vegetables, dried fish & soupy coconut milk. Kalanrakas in waray back then means variety/samasama.

I was born and raised in General Trias City Cavite I don’t recall this restaurant even our palengke was changed of location I migrated in 1974 in the United States. Arroz A La Valenciana was introduced during Spanish times before our town name is San Francisco De Malabon, since I was little girl my Mom always cooked Valenciana. Until now I always cooked Valanciana on ordinary day Not only on special occasion. California 💜🇺🇸 Note: This Valenciana are lack of ingredients this is not the original recipes. Sorry
Our calandracas is a vegetable dish not a soup. Consists of a variety of native vegetables, sitaw okra kalabasa puso ng saging and any other vegetables sauteed with sotanghon and achuete.. dont know if they were eaten at wakes or funerals
That is NOT Paella Valenciana!! The CORRECT ingredients are: Senia Rice Water Salt Eel or Duck (depends on season) Voles, if you can find them Xonetes Snails (rosemary fed) Garrofón, Bajoqueta, Artichokes (depends on season) Saffron NO CHICKEN, CHORIZO, TOMATO, GARLIC, PEPPERS AND ONIONS!! Cooking using orange wood is a MUST for the fragrant aroma. Rice SHOULD be crispy at the bottom and DRY overall.

Very few Cavitenos today speak Chabacano. My grandmother’s generation only and my mother and her siblings understood it fluently and as grandchildren, we understood a little. I learned Spanish in school in California so it helps. Lastima talaga.
