Your pink waterlily dahlia looks much like Pink Onesta

If your pink Waterlily has dark stems it might be Lovebug. Swan lists it as informal decorative and Fort Hill Farm lists it as Waterlily. It looks like your mystery tuber.

How cool that you named a Dahlia after your husband’s granddaughter. Your seed frowns are beautiful. How many did you trial to get three good ones? I always grow some for the bees but have never had beauties like that
I’ve probably grown 100 from seed. My luck got better when I started hand pollinating
