Great videos,had to sub. I've been working as s chef for years,interesting to see the contrasts in the two professions. How did you find the difference between working as a chef/baker. Similar salaries? I see you work very early,do you do as many hours as when you were in a restaurant? Chefs seem to work 50 plushours is it the same for bakers. I used to work in London as well I would be going to brunch shifts on the weekends and bumping into people leaving the clubs

I also meet people coming back from the clubs😃 Chefs earn more; more intense job I would say, baker job is more physical to me and less paid. Hey! Many thanks! Ohh I could do another vidoe answeing your questions but will try to keep it short😀 Madrid is really cool! So small compared to London, I get to work so much faster so I’m still adjusting to that!:) work in the kitchen is more or less the same, fast pace, a lot to do etc. The bakery is more artisan, however they have a list of pastries that they do regularly and they are made in a traditional good way. 8 hours shift. I do enjoy, it was hard to get used to 4am wake up but all good. You just need to set rules (bed time etc) and eventually gets better. Keep it up! Happy bakes ☺️
I would like to share you a pastry which is common in Maritime Southeast Asia.It’s called Curry puff. Curry puff is a small puff consisting of curry with chicken and potatoes in a deep-fried or baked. Other common ingredients include eggs,onions and.... . It’s a bit similar with Empanada and Chinese crispy fried dumpling.I like it so much ,so crispy!😋😋😋

Thank for your reply first. When rolling pastries. I'm learning croissants or pastries, but the dough is not stiff and become soft soon. I asked if it was because the workshop was too warm. And i have one more . Haha... How long does it take to make a croissant? From rolling to shaping.
@@alemanjohn1457 the kitchen is as hot as it gets, we bake, roll and do the rest in one kitchen ‘room’, so it gets a bit hot, so after cuting the 🔽 of croissants we chill them before shaping:) To make a croissant normally takes 2 days, but if you make them in the production kitchen we do them in 3 days:)
