I followed exactly the steps you have showed, but there are ice crystals formed in my kulfi. I added sugar as you have mentioned!

Hi..The ice crystals can be formed due to the following reasons:
1) The kulfi mixture is watery
2) Excessively long freezing time
3) The Kulfi ice cream is not wrapped tightly

Looks like none of those apply as I followed exactly your recipe steps. May be instead of 3/4 of the milk volume, it should be reduced to half the volume... just guessing!!

Hi. I believe you have added the orange zest (the outer part of the peel) which gives the actual orange flavor to the dish. If the white part was also added(by mistake), then it adds little bitter taste.
