My local chinese place growing up would make what the menu called "Singapore Flat Noodle" but they, when speaking, called Char Kway Teow. I always knew how to pronounce it but not necessarily how to spell it until years later. They had a menu change and I had to special request it for awhile until they finally stopped offering it. Probably wasn't authentic in any way but omg it was always my favorite thing. That restaurant closed as a result of COVID and I miss it so much.

The powder on the soft boiled eggs on toasts is white pepper. Sometimes, we throw in some soy sauce in there as well!
