I would say that these good Japanese hawker stalls really deserve publicity. Japanese food ingredients are not cheap, so the owners do the best they can with their budget, maintaining food quality and keeping the price affordable. The time taken to prepare the ramen broth also takes many hours, so not many people can do it daily.
agree with you, you have to strike a balance between quality and cost for Japanese food. and for authenticity of Japanese food I find that the simpler it is the better

@@reinaldtan2361 Thank you for the question! I'm living in Taiwan now and am aiming to move to Japan. I have lived in the US (Columbus, Ohio) for 3 years. Hmm, it's less about excitement for me actually. The term "刺激" (that was used) can also mean "stimulation" in addition to excitement. For me, what's lacking in Singapore is cultural stimulation. For example, our arts and music scene is nowhere compared with major cities of our caliber. Our small size also means that there is less new things to see, hear, and smell every day. Taipei, for example, has a much more bustling music scene than Singapore. The musicians are also much more skilled than Singaporean ones (the singers hold their pitch better, for example). This lack of cultural stimulation might seem trivial to some. Indeed, it seemed trivial to me. That was until I moved to the US. I was living in a small town. Life was...pleasant but boring. And I absolutely hated it. It had boring food (none of that medley of spices you get with hawker fare) and mediocre art/music. That was when I realized that a lack of stimulation (and not being around people who are excellent and creative at their art and craft) was a much bigger deal to me than I realized. Hence, my move to Taiwan (more stimulation here than in Singapore) and my aim to move to Japan. *One more thing I love about Taiwan also is that people here *read* much more. A larger proportion of people read at cafes, bookstores, and the MRT compared with Singpaoreans (rather than playing mobile games or smth). Singaporeans, especially considering our country's GDP and relative influence, are a relatively less cultured bunch. Also, their cafes play jazz lol (like Real Jazz, John Coltrane and stuff) and no Singaporean cafe does that. I've played music for fairly long so living around bad music really gets me down. They also have bookstores stocking fairly abstract philosophy (primary sources by Sartre and Wittgenstein for example) and still surviving, means there's a market for that. I also saw a guy learning philosophical logic (which earns you $0 in current and future income haha) in the cafe about 2-3 months ago.

There is another one at Amoy hawker centre ground floor - it’s called 小料理 .... the boss is a true blue Japanese. His gyudon, nanban chicken, beef udon etc are fantastic and definitely authentic. You should try !

My favorite dish from Kazan is Katsudon. I've been eating there for a long time and if like to continue enjoying the food from them. Thank you for introducing this stall to many others!
We Singaporeans also find the lack of excitement in our country to be true. Maybe thats why we devote so much time into earning money so that we can travel out of the country before Covid.
Its all depend on your interest, being an island country, we cannot compared with resource rich and bigger country, hence, we are vivid travellers. But for a tiny dot, we are actually very blessed with many things that even big country cannot offer.

Personally, I think It's kinda difficult to find very authentic Japanese food in the SG hawker center or maybe even around the region unless we are paying a higher price as in your other NOC video (Food King). Generally, our tastes are quite different, & most of the hawkers preparing Japanese food are more for locals taste or even can be due to time & cost factors.
I’m a huge fan of taisho ramen since their previous stall at Clementi mall, they made their own noodles and their broth before was much more richer but with lesser menu options than their current outlet menu. Guess they expanded the variety for the locals around that area. So the taste changed quite abit🥲
The kazan place is my go to Japanese food when I’m craving for katsu and want something cheap. It is make by order, totally should try it. Shall have it again tomorrow.

Food was at an affordable price point too given it’s location in town and what was presented to us! my office is between these two spots. But if you get a chance Ghib, lunch time menu at Torasho Ramen (which is between these two hawker stores) is mind blowing. The broth is by far the the tastiest and richest tasting i've had. Pls go try it! Most importantly , despite being a very expensive menu for dinner, its quite value for money for the lunch time menu (15-20 per pax if you share a guoza with your wife)
Haruna can try exciting things like canoeing fishing (can make fresh sushi) to the southern islands. Or staying in a kelong in Pasir Ris. or swimming from Corny island to Palau Ubin or swimming from Sentosa to Sisters Island. Or kite surfing in Changi during windy seasons! Or yoga in Sentosa on the sea! Singapore land activities are really boring but can try the sea for extreme fun! SG has many hidden adventures waiting to be discovered!

It’s not easy to find good chicken ramen in singapore, they mostly lack the depth of chicken essence in them. But recently I tried Kure menya @ Fraser tower (opposite amoy st hawker centre) 182 Cecil Street Frasers Tower #02-11, 069547.. their chicken ramen is the best, the broth is surprisingly rich with depth and not laced with other flavouring, just really rich deep chicken stock, the chicken charsiew has a firm and succulent texture like cross between sausage and chicken breast, my fav is tori fest ramen and the chicken adds kick to the taste too. Give it a try !
would love to see you try Takagi Ramen and give your thoughts on its authenticity! It's cheaper than most restaurants and originally from Tsuruga, Japan. love that it's very cheap though haha
So far the best Japanese hawker stall I had was at Raffles Place, Golden Shoe. Their teriyaki chicken is the best. Believe there are very good Japanese hawker food in Singapore but it’s not easy to find.
i am glad he said the gyokai taisho broth was abit bland and had criticisms about their ramen. i felt like they were bout a 6/10 even though there were so much hype and reviews about them. if he said the ramen was good and the same as japan, i would worry for my future first visit to japan lol. always pictured myself to be eating my heart out on next level delicious food for my first trip to japan. whew my fantasy bubble hasn't burst.
Not sure of the name, but there's a surprisingly good Kara-age place...I think at Crawford Lane. The Hawker just near Super Ngon Noodles, which is also a great place for pho. Really love these excellent, unpretentious joints.
HI Ghib, i would like to recommend you to this place that sells Curry chicken cutlet for only $3.50 the portion is really value for its money and it is really good. It is called Jack’s Kitchen located at Old Airport Road. Feel that you can do a comparison to Japanese curry and somewhat Singapore curry.

在米(ちょっと田舎)で、こちらでもじわじわとラーメン屋さん増えてますが、たこ焼きとかpork bunがなぜか定番メニューです😅
I think the Tonkatsu curry rice at Yao Japanese Rice House at Tanjong Pagar Plaza Food Market is damn good. The pork is like damn thick!

HI Ghib, i would like to recommend you to this place that sells Curry chicken cutlet for only $3.50 the portion is really value for its money and it is really good. It is called Jack’s Kitchen
located at Old Airport Road. Feel that you can do a comparison to Japanese curry and somewhat Singapore curry.
I expect ramen to be cheaper in hawker centres but sadly it doesnt seem to be. I might as well go to a shopping centre right?
