    Mustard is a magic ingredient when used with cheese. Different mustards make different magic. Loves

    Bajan tip to make it over the top pie… add generous lashings of hot sauce, a bit of finely diced green bell pepper, a tablespoon of Mayo and a half chicken bouillon cube (whole cube if you’re doing a pound of pasta) if you do, don’t add the salt. On the top lay some sliced tomatoes and then cover with cheese before baking.

    Ryan has been making that for years and it’s such good comfort food. The mustard makes the dish. Yours looks amazing. Ryan says, “Tell him we went to Barbados.” There, I told you. lol

    I personally don't ever make mac and cheese without a little mustard in it. A lot of mac and cheese recipes call for a small amount. Another great addition to try next time you make it is a little fresh nutmeg.

    My family lived in Barbados briefly when I was very young, and my mum still makes macaroni pie all these years later! She doesn't quite do it like this though, I'll have to try it this way, looks good :)

    Actually a good job man. You can also make a cheese sauce with the ingredients you added into the macaroni (while the macaroni is cooking). When the macaroni is ready, drain the water, and add the sauce to the macaroni in the still warm pot, then stir in and transfer to the baking dish. Yes grated cheese on top, and a hint of breadcrumbs.

    My mom is Bajan, and I gotta say she never made this. Im going to attempt it. Flying Fish and Cou-Cou, Pudding and Souse were my favorites growing up.

      @@eleisha5054 She left Barbados for Canada in the mid 1950’s. Perhaps Macaroni Pie hadn’t yet been created. She’ll be celebrating her 100th birthday New Year’s Day.

    You're going to be mad when you hear about the existence of ziti. But, actually, have you ever made homemade macaroni cheese? It typically involves a dollop of mustard. I know in Canadia they are really into Kraft Dinner but a homemade macaroni cheese casserole is simply divine. I personally always try to use cavatappi noodles which are spiral versions of the tube pasta you used in this dish.

      Canadian here, Kraft dinner is not all we eat. Its just a quick cheap easy meal, like raman noodles. But it's not what we typically think of when you say macaroni and cheese. We make and eat real macaroni and cheese all the time. Lol.

    Kudos for stepping out n trying new things. I cannot imagine Mac n Cheese without Worchestershire Sauce. Mustard would be a shock lol.

    You could use elbow macaroni. Macaroni pie is very common on all the Islands.

    A Dish where I have all the ingredients - will have to try it. We also do not use the elbow macaroni in South Africa. The French version of Mac & cheese gets Dijon mustard in....a lady on the Food Channel taught me that. We use mature cheddar, and a mild gouda. Topping is usually mozzarella & streaky bacon lardons. 🥓🧀

    Hi, I'm from Barbados rule #1: Never rinse your macaroni when making Pie. You did great though.

      Yea keeping it warm but drained makes it so much easier to work with as when the cheese hits it, it starts melting one time. I looked at it and thought, hmm.. mistake.

    Bajan here. Pls use a light cheddar rather than the orange version. While I add a little diced onion, black pepper, ketchup with the mustard, and just a dash of nutmeg to this dish, yours looked authentic. Goes great with well seasoned baked chicken and a tossed salad, or a rich chicken or beef stew. Comfort food. Thanks.

    You did a good job considering you don't have the kind of cheddar cheese we have down here. If you can get your hands on some Anchor New Zealand cheddar cheese you can have another go and the taste would be even better. I personally never put mustard in mine.

    The flying fish I get are always brought up by someone via commercial flight 🤣 I had it once from a super market… not good. Flying fish straight from Caribbean sea is the best!

    Looks very familiar with a french "gratin de pâtes" (pasta gratin), we use that type of tube macaroni for it too 😉

    I have a pseudo dumb question. Does ketchup taste the same in Barbados as it does in Canada and the US? I'm asking because I've had ketchup abroad where it has less sugar and more of a tomato taste. It would affect the flavour of the dish.

      Our local ketchup is sweeter then overseas’ ketchup which would be more acidic.
