How to make delicious cherry tarts / pistachio cream

    ※ ingredients
    (7.5 cm round four)
    ** sweet pastry dough for tartlets // pat shcre

    80 g unsalted butter
    45g sugar powder
    20g almond flour
    125g cake flour
    30g egg
    a pinch of salt
    1 g vanilla sugar
    20g egg
    5g heavy cream
    ** cherry marmalade
    220 g cherry
    40g sugar
    20g lemon juice
    4g pectin
    ** pistachio cream
    150g heavy cream
    1/2 vanilla beans
    40g egg yolks
    20g sugar
    3g gelatin
    30g pistachio paste
    90g white chocolate
    ** glazing
    57g water
    95g sugar
    90g corn starch syrup
    65g condensed milk
    8g gelatin
    95g white chocolate
    green food coloring
    ** almond cream
    40g unsalted butter
    75g sugar
    40g almond flour
    40g egg
    5ml brown rum
    ** decoration
    cherry ~~
    crumble ~~
    ※ Let's make it ~
    (4 x 7.5 cm round)
    1. Let's make a pat chicre.
    2. Beat force powder, sugar powder and almond powder.
    3. Put cold cube unsalted butter into powdered material
    4. Mash and crush butter to soak into the powder.
    ** This operation is called Sable.
    5. The powdery ingredients turn yellow because of the butter color,
    It gets smaller like a small red bean ball.
    6. Add egg and salt vanilla sugar and mix smoothly.
    7. Put in a plastic bag and slide it to a thickness of 0.5cm to refrigerated.
    8. When the weather is hot, do not push at once and cut a little and push it to .3mm thickness.
    9. Cut the tart ring higher than the height and cut off the top with a knife.
    This is not a knife pushing action.

    10. Cut the length of the side by 0.5cm long, and finish it as if it were pushed in.
    11. Bake for 17 minutes in the oven at 160 degrees.
    12. As soon as I get out of the oven ...
    ****** It's a crunchy tart recipe even after a day.
    (A mixture made with 4: 1 egg and fresh cream
    Apply with a brush.)
    13. Bake at 160 degrees for 7 minutes.
    14. I'll make cherry marmalade.
    15. Trim the cherry like a video.
    (If you want to work quickly ..
    16. Put cherry, sugar and lemon juice in a pot
    Boil it over low heat.
    17. At this time, leave some sugar and mix with pectin.
    Otherwise, the pectin will stick together.
    18. After completion, place in a 4cm musing ring and freeze in freezer.
    19. I'll make pistachio cream.
    20. Put fresh cream, vanilla bean and 1/2 sugar in a pot and boil.
    21. Mix yolks and sugar 1/2 on another bowl.
    22. Pour 20 into 21 and mix.
    Pour it back in the pan and warm it up to 78-81 degrees.
    23. Filter it,
    24. Melt chocolate and gelatin.
    25. Mix smoothly with a hand blender.
    26. Put it in the sachet and pour it into the hemispherical frame.
    27. Insert frozen cherry marmalade as insert.
    28. Please quench.
    29. Let's make glasage
    30. Pour water, sugar and starch syrup into a pot and boil to 103 degrees.
    31. After the fire, melt condensed milk, white chocolate and gelatin.
    32. Give your desired color with food coloring.
    33. Leave at room temperature and use at 35 to 40 degrees.
    34. I'll make almond cream.
    35. Place in soft pomade butter at room temperature, add sugar and mix well.
    36. Mix eggs and almond flour alternately.
    37. Pan the almond cream to 65% on the baked tart paper.
    38. Bake at 160 degrees for 10 minutes.
    39. Almond cream shrinks when you cool it slowly on an iron plate ~
    Fill the cherry marmalade with the gap.
    40. Sprinkle glaze on the hemispherical pistachios,
    41. Tarts and Montage.
    42. Please decorate freely ~~

      요즘은 날씨가 많이 더워서요..
      상온보다는 하루 이틀이면..냉장보관이 더 좋을 거 같아요~~
      다만..
      냄새를 흡수 할 수 있으니..
      밀봉해 주시고..
      실리카켈 같은 걸 같이 넣어..주심 좋아요~~
      더 길게 보관하시려면 ...
      밀봉하여..
      냉동보관도 합니다~~

      먼저..몰드는 실리코마트 truffles 120이에요..
      그런데 이 몰드는 반구 몰드가 아니고..동그란...구모양의 몰드에요^^
      구입하신다면..
      6.5cm 반구 몰드를 이용하시면 되고요~~
      저처럼 원형을 사서 반만 채우거나... 다 채우거나~~
      이렇게 사용하셔도 됩니다..

    으아 제가 요즘 타르트를 만들어먹고싶어서 이런저런 레시피를 다 찾아다녔는데 분베이크님 레시피는 없는 재료 도구 모두 구해서 만들어보고 싶은거 있죠!!
    제가 알기로는 타르트지는 굽기전 혹은 구운이후에도 밀봉해서 냉동보관했다가 필링을 잘채워서 먹으면 식감에는 큰 차이가 없다고 들었는데요!
    혹 굽기전 냉동보관하려면 타르트 틀 째로 냉동보관하나용?
    아니면 틀은 분리한 상태에서 보관하면 될까요!
    그리고 언제까지 보관이 가능한지도 궁금해요ㅜㅜ
    매번 영상 속 레시피를 따라하다보면 양이 되거ㅣ많아져서 반배합으로 줄이기는하는데
    틈틈이 생각날때마다 타르트지를 해동시켜서 다시 굽고 필링을 넣으면 즉석으로 구워서 먹는맛이 날까 해서용ㅎㅎ
    항상 좋은 영상 정말 감사드립니다ㅜㅜ

      성형한 후에 냉동보관할 때 틀 째로 냉동하면 바로 굽기 편하겠죠~~^^
      타르트는 냉동후 해동 없이 바로 굽는게 모양의 변화도 덜하기 때문에
      해동 안 하고 바로 굽기를 추천드려요~~
      냉동한 타르트지는 3개월까지는 충분히 가능하고요~~
      사실 6개월이 가도 외관은 멀쩡하게 보일 수 있지만..
      맛을 생각한다면 1개월 안에 드시길 추천드려요 ~~💕❤😊

    분베이크님~~저 오랜만에 다시 영상보러왔어요!
    요즘 바쁘단 핑계로 홈베이킹을 미루고있었다가 분베이크님표 타르트 만들어보려구용ㅎㅎ
    앞서 보여주셨던 원형타르트링은 타공타르트링 같은데,따로 피케작업이나 누름돌을 사용하지 않아도 잘나오나용??
    저는 다른 레시피로 원형 타공타르트링에 타르트시트를 만들고 포크로 피케까지 하고나서 유산지에 누름돌 얹고 구웠는데 밑바닥이 아예 부풀어서 올라오더라구용😭😭
    다른 타르트틀은 너무 사이즈가 크고 혼자 다 먹기엔 부담스러워서 시트지 먼저 잘 굽는법을 고민하다가 분베이크님 영상보고 소심하게나마 질문해봅니닷ㅜㅜ

      타공매트를 까는것 밖에 없더라고요~~😁
      타공매트 깔면..
      사실.피케를 안 해 줘도 부풀어 오르지 않아요~
      누름돌도 당연 없어도 되고요~~
      사실 다른 케이크 구울때에도..
      타공매트 깔면..
      너무 고르게 구워져서 좋더라고요..
      자금을 투자해야하지만..
      아마..잘 사용할 아이템이니 하나 장만하시라고.
      조심스레 말해봅니다~~
      전 정말 잘 쓰거든요~
      ㅎㅎ
      그리고..
      이건매트와는 다른 이야기지만..
      레시피에 아몬드가루를 사용하면..고소한 풍미와 함께..
      타르트지의 변형을 줄일 수 있어요..
      그래서..
      저는 박력분만 사용하지 않고..

      Мне нужно заменить его глюкозой.
      Это бесцветный или бледно-желтый вязкий подсластитель, полученный путем гидролиза (осахаривания) крахмала зерновых или документов кислотами или ферментами. Он имеет сладкий вкус и примерно на 1/3 слаще сахара. По мере гидролиза крахмала он постепенно разлагается на небольшие молекулы, в конечном итоге превращаясь в моносахарид, глюкозу.
      Сироп крахмала можно в целом разделить на сироп кислого сахарида и сироп ферментного сахарида. Сироп кислого сахарида получают гидролизом крахмала кислотой, а затем, после нейтрализации, фильтрации, очистки и концентрирования, он становится кислым сахаридом, смесью глюкозы и декстрина. Кислый сахаридный сироп имеет влажность 18% или менее, pH 5-7 и содержание редуцирующего сахара 35%. Он имеет более высокое содержание глюкозы, чем декстрин, поэтому его легко окрашивать (в коричневый цвет) при нагревании.
      Ферментный сахарид (сироп солодового крахмала) получают путем разложения крахмала с помощью β-амилазы солода, а затем, проходя процессы фильтрации, очистки и концентрирования, он становится ферментным сахаридным сиропом с высоким содержанием мальтозы. Сироп ферментного сахарида содержит 25% влаги, pH 4,5-7,0 и 45% или более редуцирующего сахара. Сироп ферментного сахарида имеет более высокое содержание мальтозы, чем сироп кислого сахарида, поэтому он имеет умеренную сладость и обладает отличной термостойкостью и устойчивостью к влагопоглощению.
      Крахмальный сироп широко используется в выпечке, кондитерских изделиях, консервировании, производстве конфет и мороженого.

      제가 원래 설탕 공예도 .. 초콜릿 공예도 참 좋아하는데요~^^
      그렇지 않은 분들이 많더라고요~
      그래서 영상으로 만들면 거의 보지 않으셔서 말이죠~~😁
      날이 좀 추워지면 한 번 구상해 보겠습니다~
      설탕공예는 앞에 램프를 키고 해야하는데요~
      그것이 난로여서.. 여름엔 작업이 어려워요~😄

    궁금한게 있는데요 ㅠㅠ 혹시 글라사주를 진하게 하고 싶으면 두번정도 뿌려야 되는건가요?? 아니면 색소를 더 많이 넣어야되나요??

      글라사주는..
      윗면이 평평한 모양인지..
      돔 형태의 둥근 모양인지에 따라서..
      레시피가 차이가 납니다..
      아무래도..
      평평한 케이크에 끈적한 레시피를 써 준다면..
      스패츌라로 긁어줘야 되기도 하고..
      반대로..
      둥근거에..묽은 레시피를 쓰면..
      여러번 뿌려줘도..
      다 흘러 내리기 마련이에요..
      그래서..적당한..레시피를 찾으시는게 제일 중요하고요..
      하지만....글라사주를 두 번정도 뿌리는 건 괜찮지만....
      그 이상을 뿌려서..너무 두꺼운 건....비추예요..
      사람들은..
      두꺼운..껍질 느낌을..많이 받고 싶어 하지 않거든요..
      겉에...색을 진하게 내려면..
      제일 간단한 건..
      색소를..더 진하게 넣어 주는것..이지만..
      또..다른 방법은..
      안에..무스를.겉에 글라사주와 비슷한 계열로 맞춰주는 것이지요^^~
      (체리무스에 레드 글라사주.)
      어느 정도를 원하시는지..또..글로 쓰다보니 설명에 한계가 있네요~~😉
