    How do you do the magical cooktop? Do you have an induction burner hidden under the table that heats the chud piece?

    Over the holiday weekend my brother's family and I grilled up some Jerk chicken on Saturday and smoked some baby back ribs on Sunday with all the best sides! I love food!

    I use Ranch of Blue cheese for the celery that goes with the wings. I never use those sauces on the wings.

    Cornstarch on wings is the best thing for a coated wing on the smoker that I have found. It does give them that extra crispiness that the skin alone does not provide. I still prefer them naked but it is good for a change in pace.

    Can't go wrong with any of them. I've even done smoked and then high heat grilled (or under a broiler) to get a little char and crisp up the skin. Perfect example of simple foods can be the best foods...

    When doing wings, I like to keep them intact, so I get the skin stretched at the joints. If I cut them, that membrane between the drumette and the flat coils up and I don't get it, but uncut that stretches out and gets nice and crispy.

    blue cheese for spicy wings. ranch for savory wings. no sauce for sweet wings. smoked then fried is the best way to cook wings. this all my personal opinion.

    I’m pretty much on seltzer. But I would definitely drink coors light from their pint where their mountains turn blu Use to drink miler lite before I realized there is actually a lot of better beer.

    Funny, I made my simular twist on some of these last weekend. They came out superb. I perfer Lighthouse extra blue cheese or country style ranch. Paired with country style potato salad and churched up bbq beans. Grandson loved umm..

    I think blue cheese rocks! Cooking Thanksgiving for a couple dozen people this year, 2 turkeys deconstructed, breasts smoked to ~150F, thighs deboned and grilled to ~190F, wings JUST LIKE THIS, leaving the drumsticks. Maybe popsicle and teriyaki to 200+F?

    Maybe add some Szechuan peppercorns to the rub? I think grilled wings are the best flavor and should be spicy/mustardy/buffaloey for sure.

    I love direct heat grilling........my meadow creek bbq42 yields the best smoked/grilled/roasted wing. I can turn out damn near a whole case of wings in about an hour.

    I hated blue cheese until I had a GOOD homemade blue cheese dipping sauce. Night and day compared to store bought stuff. I still love a good homemade ranch though.

    Looks great. Did some wings on the smoker a few weeks ago and used the Leroy and Lewis mustard recipe for the sauce. They were amazing.
    I won’t harass you about the dried sausage this video, but you still totally should make it.

    Looks great! My go to recipe is half seasoning, half cornstarch tiny whisked together, throw chicken wings and seasoned cornstarch in big ziplock bag, throw the bag around to get it all good and covered, and then grill to charred, not burnt, then toss in sauce, GG

    Chicken wings either BBQ or deep fried are in the top five of dishes you can do, and I'll die on that hill. I also don't mind blue cheese haters, that just means more blue cheese dressing for me.

    Love it! Question... What would be the difference between the direct heat you just did and charcoal grilled. Isn't that the same thing if the lid is closed?

      He's cooking it direct heat over the charcoal coals. So there is no difference. He has the lid closed except when flipping/mopping.

    You can tell if it’s going to be a long cook when he shows it. If it’s late at night it definitely took a day or 2 but if he’s done in the day a very short cook

    You know what they call Buffalo wings in Buffalo? Wings.
    One of the best ways I've made wings is to smoke them first, then grill to crisp them up. Finally, just toss them around in a bowl with melted butter and Worcestershire sauce.

    Fried wings are only best if they're smoked and then flash fried for crispiness. Otherwise I'd rather have direct heat every day of the week.

    as a teenager (circa 1997) I worked at a little Italian Pizza Joint called Josephs Pizza in Jax FL , I was making their homemade Blue Cheese dressing one day.. I would sneak a bite of the cheese by it self, an the Ol Man caught me about my 20th bite in, he smiled and said your gonna pay for that later.. I assumed he ment out of my paycheck... I was wrong... do NOT eat alot of the cheese by itself.. TRUST ME !! I didnt took me a few years to get my taste back for bluecheese dressing hahaha .. still my Fav ,

    I make a wicked wing on my Pit Barrel Cooker...I think the ONLY way to make wings is on the smoker. Not a fan of frying.
