    I have issues with my wrist and can't stir like that so I put it into a small silicone pan and steamed it for 20+ minutes in my Instant pot. Came out great! Thanks!

    Could a dehydrator be used to dry the cheese? Maybe on low temp? My lowest temp is 95 degrees.

      This cheese looks fancy but it is very easy to make. It takes small steps over a few days. There are simpler recipes on my channel but they don't yield the firm cheeses.

      Thank you! The 5 days makes it more like a firm cheddar cheese. You could use it straight away as a soft cheese or dry it longer in the fridge.

    I would love to try this but am v reactive to xanthan gum. What role does this play and can I eliminate it? Thanks!

      I think you may have a softer cheese but it would work! You can always increase one of the other thickeners to compensate.

      Yes, but it gets split up into a few minutes at a time. The long part is the culturing or drying.
