    Bruh. We’d search the cupboards and fridge like “there’s nothing to eat” then my mom comes out of nowhere with a three course dinner. That woman had the gift of turning nothing into something. Miss that woman every day.

      I've done that before, and ended up being the favorite thing that my sons would ask for later.. 😂 sounds crazy, but i had leftover bbq chicken, and idk where my brain was that day, but i cut the chicken up, added baked beans and some more bbq sauce and threw it over rice. My sons are in their 20's now and still ask for this thing.😂😂😂

      My mom used to do the exact same! I HAAAAAATE soup with a passion, but we were down to nothing in our cabinets and she somehow found enough ingredients to make this spicey veggie soup. She made an entire stock pot full, and I hoarded the whole pot 😭😭 it was so good. I miss her so much! 😢

    I love making something out of nothing! I made chicken soup today with lots of spices, boullion. Half an onion, 2 potato’s finely diced. Spaghetti noodles par boiled and toss into finish cooking with Half a pack of cooked chicken- saved the rest for another day. Half a can of green beans left over from the day before. And can’t forget them herbs! Was soo good so filling and perf for this time of year. I’m truly grateful and be blessed to come up with meals when it seems like we ain’t got it we still do ❤ them enchiladas looked fire 🔥

    Wow that looks delicious! And yes great tips for extending your food budget- add cheap fillers like an extra chopped onion or chopped cooked potato. Will make the meal more satisfying.

    Mt Grandma grew up so poor she used to joke they couldn't afford their dirt floor lmao. She was the oldest of 11 or 12 kids, the whole family picked cotton to survive and relied on the kindness of their neighbors, the landowners they worked for, the churches, and road kill to eat. My Grandma said some of their favorite "dinners" were on days when their mom sent my Grandma to get cream from next door, and my Grandma would churn fresh butter, she always volunteered bc she got first bite lol. And as long as they had flour, they would have fresh hot gigantic biscuits with freshly churned butter.

    Pasta variations has been friends in mine since inflation. Box of noodles. Whatever meat.. Or bunch of veggies. Sauce. Cheese. Oven or stove top and loaf bread garlic toast.. or cheesy chicken/rice. Spicy ground meat/rice. These days we reallllyyyyy gotta get creative

      I make garlic bread out of sliced bread too!😊 How do you make yours?
      I spread a little butter on the bread -just enough to cover the bread
      Sprinkle shredded or sliced block mozzarella, cheddar, or pepper jack cheese on top
      Sprinkle a little grated Parmesan cheese
      Then sprinkle garlic powder on top, then put the bread under the broiler until the cheese melts and the edges of the bread get a little brown and crispy.

      my grandmother would use potatoes instead of rice when she did ground meat and it was way more filling and went farther than dirty rice (what people in my area tend to call ground meat and rice)

      Meat, potatoes, rice, a can of mixed veggies, some bouillon powder and or tomato sauce: gold. If you need to stretch the meat, cut half of it with rolled oats.

      @@kiomaelouch7192 really not sure how you managed to misread my comment but as anbikiwi said, I'm indeed talking about cooked rice. Our rice cooker can make up to 24 servings. More than enough to last a couple days. No one wants to cook every single day.
      I'm confused on what you thought I meant. I don't think you can even buy uncooked rice packs that small a serving. Also the clear patronizing tone you took, really unnecessary.

That extra fried carbs stuff is what clogs your arteries and causes health problems down the line. Thats why body builders aim for eating multiple chicken breasts and other proteins daily as well.

      It's also true tho. 😋 Every time I eat at a local Mexican restaurant that's owned and staffed by a Mexican family, not once have I had stomach issues from the food and the food is always big portions and DELICIOUS! Only times I've ever had issues after eating it, wasn't because of the food, but because I'd been drinking and was really dehydrated from alcohol lol.
      Makes me wonder if the stereotype comes from people drinking too much and then eating Mexican food afterwards (since it's really good drunk food) and also from people who go on vacation to Mexico being drunk most of their vacation...? 🤔 I honestly wouldn't be surprised if that's why lol.

      If you’re feeding 6 people per meal it unfortunately is scraps because it isn’t enough for everyone !

      Take a shrimp, peel and devein, cut length-wise, chop it 10 times from tip to tail, use as you see fit. Reserve the shells; toast in a pan til fragrant and slightly browning, add water and boil. Skim the scum if you wish but it just makes the broth a bit cloudier (I like cloudy broth); strain out the shells, let cool, freeze in portioned containers - you now have shrimp stock for future cooking.
      Anytime you use veggies: reserve the cleaned but largely inedible parts in a bag in the fridge or freezer (end pieces off mushrooms, onion skins or tops/bottoms, carrot stems, cabbage cores, etc). When its full or you want to use them, boil until broth is nicely colored/flavorful and what bits can reduce to mush. Strain/remove inedible bits, keep anything that dissolves/reduces to mush - you have a veggie stock. Fat trimmings get their own bag, rendered bacon fat gets a jar on the counter or in the fridge depending in your preference, stale bread thickens soups, etc etc.
      Your limit is your ability to think creatively: scraps are what keep you alive, and you can get by if you've the mind to repurpose and utilize what otherwise might go to waste. We throw so much away - there's no need to.

    If my mom had a little ground beef, she would cook it crumbled up in a skillet, drain any extra fat, and mix some beef bouillon in some water. Then put it over rice. Maybevsone veggies on the side maybe not.
    This was in the early to mid 70s. It was her made up dish. In the sixties she sometimes made bacon, eggs and toast or pancakes when things ran low. Then those things were cheap, and that would have been considered last ditch to have thar for supper.
    Both were darn good.

    The easiest way I use veggie straps is to chop and toss them in a casserole dish with seasonings, oil, and some kielbasa sausages. And roast them in the oven.
    Just last night I used three carrots and an onion that were about to go bad with a couple potatoes and the sausages. Salt, pepper, ground mustard and fennel seeds, paprika, and garlic. Then I used some flour, butter, and water to make biscuits. And then I topped the plates with white gravy. Hearty, filling. And used my scraps.
    Other veggies I've used are green beans, corn, peppers, and broccoli. Can't go wrong with this one. Very flexible. You could even sauté a little spinach for it too.

      Same, I cook with scraps a lot and it helps to spark creativity. One of my favourite things to do is turn my scrapped potato peels into chips by frying them in oil. They have to be cleaned well, but they taste amazing and help to prevent food waste.

    They literally are the best meals. Once I had some canned pork I didn’t know about or what to do with it but I didn’t have much to choose from. I had some flour tortillas and a can of red enchilada sauce and a little bit of shredded cheese. Ended up making pork enchiladas topped with lettuce tomato and sour cream I had a bit of in the fridge. My mom ended up calling me for the recipe later that day since she had some canned pork too 😂

    I always have bread or tortillas in the freezer and rice or pasta in the pantry. Canned fish, peanut butter, canned beans and soup, tomato paste, frozen veggies, some type of frozen protein whether it's meat or plant based. Lots of shelf stable condiments and a strong spice cabinet. I get fresh perishables as needed but having a strong non perishable pantry and freezer is so versatile and important!!

    I've always loved doing something similar: individual casseroles. Rice or noodles as the base, leftover veg, whatever meat and cheese we can find. Sauce made from packets from Taco Bell dumped into an "empty" mayonnaise jar with a little milk. If your mom knows how to cook like this, you will never starve. And if you learn to do this from her, you will never starve.

    Cooking delicious food is one thing, knowing how to cook delicious food with scraps is an even harder skill so congrats !
    In my case, when I have scraps of ingredients, I also love to improvise by making gratins, lots of mason jars of fruits/vegetables sauces, soups, smoothies, chinese dumplings with homemade wrappers, stews, or rice/quinoa bowls. It really helps my wallet on the long term and every week ends up as a surprise which is a nice perk !
    As my only grandma used to live on a big farm that included lots of different animals (including horses), a big garden, an orchard and a big field of potatoes, you can bet I learnt so many culinary skills with her, because her family would never throw any scrap of food. Even the fruits/vegetable trimmings/leftovers and corn knobs would get boiled and served to enhance their pigs' diet. So thanks again grandma, you're the best and I'll make sure the next generations of our family never forget your wise knowkedge and skills !!! ❤

    You have achieved Super Star Mama status!!! Wow!! Mama did stuff like this for us when we had nothing. a 1lb of ground beef and 4 bags of ramen noodles and canned corn became a meal that 6 of us could all enjoy.
