    I use a Breville 16 cup Pro I have had for 7 years with added dicing kit. For me to slice my onions. 8 cups of onions with adjustable slices from 0.3 mm -8mm would take about 3 4 minutes. I ‘ve done 10 bs of potatoes with skins about 10-minutes
    I also use it with the dicing kit kit 8 mm 12 mm dice and 16mm dice. Super time saver when canning.

    I wanted to say first how much we appreciate the content you and Jim produce. Preparedness is so important not only for emergencies but also for long days where convenience is king. When I make caramelized onions or French onion soup I use my roaster oven to do a huge amount overnight. We can french onion soup and also dehydrate / freeze dry them and use them as seasoning.

    Nice Video as always. I have a little tip. I used to work in a restaurant years ago. We made our own homemade onion rings, and of course sliced onions for sandwiches and such. We used the meat as slicer. It was like a mid size one with a blade of around the 10 to 12 inch range. Also did tomatoes on it. Think cucumbers, zucchini, peppers. Bit of a investment but maybe worth it if one is doing large amounts of dehydrating, freeze drying, canning.
    Just a thought for anyone who has one already, sitting around. And anyone like me who wants to get one.

    I am so happy you showed onions being freeze-dried and dehydrated. Due to the high cost and space of a freeze dryer, i was able to get a dehydrator, and I love it. I am so glad to see how i can dehydrate onions. Thank you.

    👍Onions have a low glycemic index (GI) of 10, and this remains similar whether they are eaten raw or cooked. The GI of onions is consistent across different varieties and regions, although there may be slight variations due to factors like climate, soil composition, and farming practices. Cooking onions can slightly increase their sugar content due to caramelization, but this has a minor impact on blood sugar levels👍

      This is true, however what I was very surprised about when I was on a low-carb diet is onions are very high in carbohydrates. I guess because of all the sugars in them.

    I love seeing that I'm not the only one who wears a cut glove with the mandolin.
    My head doesn't have balance, but I like to cook, so I have P.P.E. for when I use knives, but I figured out that they are fantastic for the grater and mandolin.

    Hello Pam and Jim! Catching up on your wonderful videos. I decided to pressure can my carmelized onions and they are wonderful. I canned them in half pints and we use them on burgers and hot dogs. Will probably make French onion soup with them. Praying you both are well!

    Love the safety glasses. My children gifted me a pair of "onion glasses" years ago. It makes a huge difference when you have a way to keep the fumes from making you cry. I am currently freeze drying 8 trays of sliced and chopped onions. Those glasses were a life saver.

    I love carmelized dehydrated onions! I prefer to carmekize them in the slow cooker, adding only 1/4 cup of water. I use them so often in so many ways.

    This was fun. I have never used thyme and bay leaf. I also didn't know about putting the lid on at first. They look delicious. I carmelize the onions and freeze them in portions. Sometimes I add mushrooms and reduce with a little marsala wine or white wine. They are all really good but the wine isn't a dealbreaker in the event of non alcohol preference. Thanks for the ideas! ❤🌏

    I don't have a freeze dryer yet but I have had a dehydrater for at least 20 years or more. I make those every year. When making them , I often use a bit of balsamic vinegar, no water or butter. But broth would also work but balsamic vinegar, about a 1/4 cup for a 7 quarts slow cooker, it doesn't really change the taste but just enhance. They are good in salad, use in soups, stews, fried rice, etc. But ground and added to salt as caramelized onion salt, it is so delicious. I even have a friend who ask me for it every 2 months or so. She sprinkles it over toasts for breakfast with eggs or with soup.

    Watching you slice all those onions on a mandolin, I just had to comment that before it finally broke, I used my meat slicer to slice onions. SOOO much quicker, easier, and ... no tears.

    I put onions in the refrigerator for at least 1 day before cutting them. This stops the onions from releasing their gas so my eyes don't get irritated.
    That's the only thing that I have found that helps.

    I have not been commenting, but I have continued to learn. Thanks, Pam and Jim! I am interested in the caramelized onions, and wondered about the oil; I may, perhaps, try dehydrating them on paper towels to absorb the oil from the butter. It will be a nice change. I have dehydrated many, many pounds of onions over the last few years.

    My favorite onion canning recipe is sweet onion jam (has balsamic vinegar and brown sugar in it). It's great as a condiment for sausages and brats. BTW, I've found that if the onions are chilled, they don't make my eyes tear up. (But your goggles obviously work too.)

    I love my dehydrated onions...but I don't always love re-hydrating them. Plenty of "oops, I forgot again" moments. I'm currently dreaming up a green chile sauce that can use up the last of my green tomatoes, and the dried caramelized onions might both soak up the extra liquid and balance the acid, reducing the amount of sugar needed.     When I rehydrate my freeze dried vegetables, I only put in enough water to get the job done...no water left after rehydration is complete. My vegetables don't disintegrate.

    I came here to see what your recipe/process would be - because we were told years ago you're not supposed to do high fat in the freeze dryer. We caramelized our onions in the slow cooker with just water - they turn brown and taste ok - but I'm not sure which way to do it - I just pull them out and use them in all types of cooking - I have a lot of jars of french onion soup which I might add them to. . . Hmm - mine are not true carm. onions but they will last a LONG time - Maybe I'll make a few with butter just to add to the soups this winter - might be yummy!

    Thank you so much for your videos. I am so glad to have found you again. We moved to MO from SD and I have not been working on any canning, etc. In this video you are using a gas two burner. I have looked on all of your equipment and can't find that listed. Can you please let me know where I can get this? We no longer have gas as there are too many rocks so I have a flat top electric stove. Not good for weight for cooking, etc. Thanks so much. You are a blessing.

      We used both the butane Martin and Coleman single burners in this video. But Pam now recommends the Coleman single burner butane camp stove (you can find it in the Off Grid and Camp Cooking Equipment list--item four--in our Amazon store).     Pam: The moisture is understandable as onions are almost 95% water by volume. Was any fat used at all in the preparations of your caramelized onions? Would using ghee instead of butter extend the shelf life any on the caramelized onions? Those caramelized onions when crumbled would make some wonderful onion buns for hamburgers. Very good job on those onions.

    Another lady on TH-cam has a fan blowing towards her when she cuts onions . The fan blows the fumes/smell away. She said it works great. I know that my air conditioner blows right on me when I'm cutting things and onions don't seem to bother me.

    I have a couple of questions:
    What temperature in the dehydrator did you dry the onions on?
    Could you cook the onions in half the required time, dry them (either method) and then finish caramelizing when you need them? I’m rather doubtful on this idea but wanted your thoughts on it.
    I will definitely make these. I only have a dehydrator but I’m thinking 135 or 125*?

    Thank you for the video's. On Amazon there is onion goggles, that have arms like sun glasses. Many different styles and colors...Would cutting the onion in petal pieces, be better than rings for the caramelized ones ...they wouldn't tangle as much.

    Did you try a wet paper towel set next to or on your chopping board? If l am chipping a lot of onions, l will wet the paper towel again or just get a new one. Even my kids couldn't believe how well it worked!

    I don't have a freeze dryer, I want 1, I started to save for 1 even got a plug put in just for it. Then the heater pump on our furnace went out. After that and months go by I can start saving again then the heater went out again and because it was such an old heating oil furnace they weren't sure they could still get the parts. They did but there went anything I was saving. 2 weeks go by they get fixed and run it a few hours and finally it's warm and wonderful in the house. We head off to bed and I was up to a strange sound. Which is very odd for me because I sleep like I have been knocked out. I take my sleep mask and push it up to my forehead but I can still hear my music in the speakers of the mask but I hear some sound that sounds like those torches they use when they burn ditches in the spring. It 2 am and I am confused so I then notice all my windows are like a red orange glow. I panic thinking there has been a terrible accident near by. I have the only driveway lg enough for emergency vehicles to even pull off the road. I get to back door and everything is lit up and I lean out and look up the drive and I see nothing. Now I'm really confused. So I step out and I am looking all over and as I I turn to look from the field towards the house I see it. 6ft of flames coming from the chimney where they tied the furnace into. I run back in holler at hubby the house is on fire, thankfully we are in the country and he jumps out of bed runs around the house butt naked. Grabbing a fire extinguisher and it's empty. He runs up to the kitchen gets another and gets the fire out that was contained in the furnace and the chimney. Then smoke fills the house. When the furnace people come we have to get a new electric furnace. We'll no freeze dryer for a while. I needed a deep freezer really bad so I got a sm one from Costco and then I could start saving for a freeze dryer but I was going to be able to put back as much money because of paying on the furnace and food going up. Finally I can save again after the deep freezer. My neighbor was kind enough to give me a rather good amount of beef to put in my little freezer I was so excited and grateful. He's a beef cow rancher and I am surrounded by his fields and cows. 4 months go by and I seeing some hope for my freeze dryer. 4 months from the day the deep freezer was delivered it quit. Costco won't fix it because they don't have anyone near me to come. They tell me that they have a 2 year warranty when most places only have 1 yr. I'm just trying to pick my jaw off the floor and say I don't care it's only been 4 freaking months. They just refund me the price of the freezer, not to mention the meat the neighbor gave me, the 4 shelves I had shoved full of steaks and 1 shelf with about $300 worth of grass fed butter. I was devastated and physically sick to lose all that. I cried for 2 days. I finally accept what happened and I have not yet been able to get it fixed or replace what was in it. I have come to the conclusion that it costs me incredible amounts to save for a freeze dryer. But I do have a small dehydrator and I do dehydrate caramelized onions that we grow in the garden (southern Idaho) i rarely use them for recipes. When any of the 5 kids come to visit i dump a jar in a bowl and a jar of roma tomatoes that are dehydrated in a bowl and everyone snacks on them like chips. Except for 1 of the boys, he goes and gets his own quart jar of onions and eats the whole thing by himself. They do make the best crunchy snack and I don't like tomatoes and not overly fond of onions but it's so delicious that way!!

    I freeze dried some onions; I think they were raw and then tried to stirfry them with some butter and they turned black. Should I always cook them first?

    Just need a bit of clarification, please. If the onions are cooked in just a small amount of butter, it's still safe to dehydrate? I have avoided dehydrating foods that were cooked in fats like butter or oils. What temperature did you use for the dehydrator?

    Fried onion rings is too involved and messy to do as needed. Onion rings done for large freezer storage worth it? Favorite food. Going to try dehydrating. Been told via online not to save any kind of used oil as not healthy. Any thoughts?

    what if you cooked them in ghee?? Would they last longer? Then the butter wouldnt go rancid.
