      You know I was going to take my large steamer to goodwill a while back. Not using it now that the kids are grown. Then I saw a pepper show where one was used to rehydrate meats,etc. I kept that hydrater...they don't make them as good these days so it is a keeper.

    I wasn't there, but the first batch looked papery on the video. The second batch looked so yummy! I do understand about memories flooding in when you taste something that your mom used to make.
    I had a memory like that this week. For me it was the Yankee candle display in a store. I didn't know it was there, but I was in the vicinity and could smell the fragrances. It reminded me so strongly of my sister that I cried a bit in the store. It was sad, but it made me happy at the same time.
    It is amazing the way we remember tastes and smells and the strong memories they evoke within us as a result. I'm glad you got to go "home" for a minute in your memory.

    Now that you have me teary eyed with what you said about your mom ot makes me miss mine. Have to make something she use to make and have more of that feeling tonight. I'm also hungry now for corned beef just glad I have some in my cabinet. Thank you for your memories your tears ... that I'm also feeling right now. It's exhilarating. Another great video.       I have been wondering too 😃. My family actually loves cooked cabbage and I’ve been wanting to preserve it but not turn it all into sauerkraut. Now I know I can dehydrate it.

    Dehydrated cabbage is fabulous. I use it as salad, soup or casserole toppings, snacks, lightly sauteed with onions & garlic in a bit of butter and stock. It goes into my meal in a jar. I nver have parboiled but will now give it a try, with the pinch of soda. Which is how I dehydrate celery. I usually dry green but occasionally purple cabbage, just for fun color. No freeze dryer, but it works beautifully in Excaliber dehydrater.

      One year I stored cabbage with root still attached in my basement. Late winter or early spring (can not remember) I used the last and had to peel about an inch of dried outer leaves (large heads) and interior was as just harvested.

    I made my paternal grandfather's beef veggie soup the other night. I use a bag of coleslaw in place of a small head of cabbage and shredding a bunch of carrots.
    It's a favorite soup of mine. Lots of onions and garlic along with stew meat and potatoes. His recipe calls for beef short ribs which are expensive. Stew meat and beef broth work just as well.

    This was great.. Interesting that boiling produced a better product.. Some from Scottish affiliated parts of the world put cooked cabbage through mashed potatoes as a side or let the cabbage/ potato mixture cool and make patties, and then serve with fried eggs or put saluted patties in a bun with other fixings.. Bacon. saluted onions/poached egg.. Some also put the patties along with other fixing of a hard cheese in the centre of the potato Pattie and then put Pattie through a flavoured batter and deep fry it.. Cheese becomes soft and batter crunchie.. Lochness Scottish Highlands

    Just a suggestion Pam, I’d heat the corned beef in the olive oil first, then all the onions, garlic and cabbage. The flavor of the corned beef would then permeate the cabbage mixture…. love that flavor!

      For me it’s the other way around - sauté onions and garlic first then add the corned beef and then the cabbage. The onion/garlic oil will infuse the meat and the cabbage. In my culture we sauté the onions with chopped tomatoes, mainly fresh but preserved in oil works, garlic & hot peppers then crumble in the corned beef cover and steam cook for a few minutes before adding the cabbage. Sometimes we will add corn kernels. Serve over plain steamed rice with slices of cucumber and tomatoes and that’s a fantastic dinner. 🤤

    I was touched by your throwback moment❤. I dehydrate cabbage often but have never blanched it. I just throw it in a pot of boiling water with some bacon, salt and pepper. I really think cabbage is one of the best things to dehydrate. Thank you for all you and Jim do to teach us safe food preservation.

    I hadn't even thought of dehydrating cabbage but it's awesome that it worked! Memories are great. Sometimes I get a smell of my grandpa's car....I'm 68 & was 5 when he died.

      I waterbathed a recipe for canned Cole slaw. It’s delicious and crisp. All the ingredients are in it except you add may when you open it. Recipe is a keeper.

    I've been cooking what my grammaw called fried cabbage, but it's not actually fried per se. She fried bacon ends and pieces or bacon grease with sliced onions then added cut up and rinsed cabbage to the cast iron skillet. She added salt and pepper then put a lid on it so it could simmer on low, with occasional stirring. The cabbage released its own water and boy it was always so good. I'll have to figure out a way to get the same effect after I get a slew of cabbage dehydrated. Thanks for sharing Pam. We also enjoyed corned beef and cabbage but she crumbled the beef in the skillet. Plentiful ways of making and enjoying a great dish.😊

    I’ve been putting my cabbage upon the shelf that way for a while now, and it’s wonderful once it’s reconstituted with water. It’s also a great way to keep your cabbage shelf stable, so go have fun with more dehydrating, and keep filling those jars! 😉

    We were gifted the most beautiful dried borscht. It looked like flower tea, and tasted yummo. It was dehydrated beets, cabbage, onions, potatoes, dill, and that's about all. We needed to cook it up in chicken broth. Yummy.

    I freeze dried cabbage from our garden (raw no blanching) and it cooked up beautifully ❤️

    I dehydrated cabbage a year ago and am now trying to find a good dried soup mix in a jar that I can use it in. It's good to know the cabbage will rehydrate that well in a soup. Thank you for this video.

She did several different variations to show how to best not only dehydrate, but then prepare the cabbage and I love cabbage so much that being of the buy it when it’s cheap and dehydratedor later use would be absolutely wonderful so that I have it in different ways your videos are so informative

    My Mom used to make cabbage and hamburger. Only additional ingredient was salt. As an adult, i cook with a lot of herbs and spices. But now and then i make simple cabbage and hamburger. Memories flood my mind when i do.

    You mention coleslaw mix, if the price is right, I'll use the coleslaw mix to
    make sauerkraut. It's already weighe
    d which saves time (one needs only to weigh the salt at a 2% ratio to make it work with the cabbage). I check for a price reduction everytime I shop.
    PS: I'm so going to try this - I've actually been wondering if it could be done and a great candidate for the bagged slaw mix❤

    ❤ Once again a video where I've learned something new in my old age, thank you! I can't wait to try your corned beef and cabbage recipe :) Of all of the many vegetables that I dehydrate, I use dehydrated cabbage most frequently. I throw big handfuls into ramen (along with dried carrots and green onions and egg) to make it a little healthier and more tasty. I will now start blanching my cabbage though I never had before, I love the color difference.

    Sweet memories here too. ❤ I never tasted corn beef any other way until I was grown! Mother would also make it into corn beef hash ❤.

    I am so excited. i have frozen cabbage but never thought about dehydrating it. Thanks so much for the experiment! I will use this method this summer with all the cabbage I grow.
