      Thank you Suzanne!! I think it's really important to get creative with the same ingredients over and over! Boredom hits when we aren't trying hard enough right!? I also believe that I haven't even touched the creative side of my brain with recipes yet-- I'm just warming up!

    Living in Egypt and being a WFPB freaks people out here, but I don't care as long as I feel healthy. I also (like you Miranda) keep it simple in the ingredients coz I have no time to prepare complex stuff, basically rice and lentil mix, all kinds of baked or boiled veggies on a side, and a ton of raw veggies in salads and raw fruits too. I never buy any canned food or anything pre-prepared coz the quality of it here is bad. I love you Miranda and love your approach which is realistic to most of the people out there all over the world. Salutes from Egypt 🌍🍀🌲💚💚

    We mash sweet potato with nutritional yeast and layer that with our enchilada ingredients. Makes it so creamy and so good, my kids will eat a ton!

      @Peter Rabbit when I first went vegan I ate 1-2 cans of chickpeas a day. Not lying. I was sooo addicted! That ship has calmed a bit but whenever I have them in my house it’s the first thing I grab for at each meal!

    Your enchilada bake!!! I was struggling to come up with a meal with foods I already had in the house for dinner tonight. I had everything except for the el pato sauce. Picked up 2 cans for less than 1.50 (added a few more seasonings we already had) and bam... such a hit! I know you say you do this as a hobbie but you are darn great! Thankful I found your channel!! You are making the switch to vegan life so much easier for us with tasteful affordable foods. I truly appreciate your efforts and time. Happy Holidays!

    I remember growing up so many meals were just using up leftover food (which I didn’t realize at the time) but I remember them as the best meals!! My mom was so resourceful!! My family doesn’t usually like when I try to do that though 🤣. My husband thinks some of my meals are “weird” but I think it’s from growing up and having so many different things paired together! Great video!!

      Honestly it’s the best way to make meals! Make every component ahead of time and than create meals as you go using those items! It saves so much time! And you can get so creative- even a little weird 😂😂😂 like cauliflower on nachos 😂🥳

    Thanks TH-cam for bumping this video into my suggestions -I’m subscribing today and excited to go back and watch your previous videos! I have been WFPB since last January but my family is not (one is vegetarian; the others like meat but are fine to have it only about 2-3 times a week). This video is very similar to how I have been able to eat WFPB this year-simplicity!! I make things like this for myself while for my family I cook spaghetti (no meat) or dishes that have cheese, etc. There are some things I make that we all can eat, and my hope for this coming year is to have more meals we can share (and ENJOY-that’s the thing-they don’t enjoy most of what I eat so I don’t want to force it on them!). That will simplify meal prep and shopping -I am also needing to trim the grocery budget. Thanks for your video! This is really great information to show what you can get and make with just a little money. And your presentation is not intimidating-I think someone who has never cooked before would feel confident in making these things. 👍🏻🙂👍🏻

      Thank you so much for your kind comment! It really means a lot to me! I hope my videos inspire others to try! Try cutting back on grocery expenses, try new meals, try a few plant based recipes! Trying is half the battle!
      We have found a good balance in how I cook to meet what my husband loves! He's not vegan but willing to eat plant based as long as he enjoyed the meals! which like you said it can be the bigger battle! You can cut way back on your grocery bill but if you don't like what you're eating you won't stick to it!

    I really have been enjoying your videos. I like seeing options on more vegetarian type meals. I love all types of videos on budget eating as well. Would love to see more cooking with basic cooking equipment not so many of us have instant pots or other kitchen gadgets when we're trying to keep on a budget but just basic cooking with pots and pans would be a helpful addition to these types of videos

    Love these ideas! I have 1 sweet potato leftover from the sweet potato chili you showed us so I’ll be “halving” the sweet bread & using that. Some restaurants (remember those? 😩) serve Spanish rice with carrots & peas so why not enchiladas with carrots & celery? 👍🏻😎 those donuts are such a cool idea! You’re so creative 🤩

    If you are not going to eat the bananas you can rippen them fast by putting them in a 350 oven for 30min. They come out with black skins but the inside is ripe and ready to use in a recipe.

    One of my family's favorite dinners is an enchilada casserole. I cut up the tortillas into little squares and layer it like a lasagna with beans, corn, "cheeze", and enchilada sauce. My family is half meat eaters, so they get chicken added with regular cheese. It's super easy and delicious!

    You soooo lucky to be able to buy food so cheap. I'm in Brazil and the same food here is 500% more expensive!!! Now if compared Dollar per dollar is 50% more. Buy the way, if you soak your beans over night will cook much faster and would be much softer and tastier

      Yes someone else mentioned this as well and I do LOVE fruit however I find I don't really crave it when its colder here! Its a huge staple of mine in the summer and I feel like I live on it but once its cooler the only thing I really eat is bananas and maybe I'll add frozen fruit into my oats (this is usually on the week alternating the $20 shopping trip!)

    I love your super simple meals! Often I’m not motivated to make something complicated, and these all seem easy and simple. I love how you include the meal prep to help pull it all together! I saw you shop at winco. I have bought their dehydrated celery, onion and celery mix in the bulk section. Since you like this combo, you may enjoy this. It’s inexpensive and convenient.     I love veggie enchiladas! They are so yummy. We do zucchini and squash in ours.
    We are setting some budget goals for next year and some heal goals. 1. spending less on groceries (and putting savings towards debt) and eating more whole foods ( this is always a goal of mine put I always fall back to quick processed foods). Keep the frugal meal preps coming!

      @@flourishingmiranda yes, it is. Once a month-6 weeks, I make lentils with carrots (4-6, I like carrot in every bite), celery (2) and onion{1), same with great northern beans, freeze flat and voila. At least 20 meals, more when stretched with veggies and rice, for less than $5!!!
      Thank you for mentioning the food pantry. I volunteer. I've been able to add beans, rice, oats and tomato products for healthier choices from private donors. The need is real.

    Thank you for mentioning to folks on a budget that there are resources for free food in their communities. It's available and some dont realize it. Several churches in my neighborhood are now doing drive through food pick up twice a week due to covid and social distancing but folks without cars can still walk up too. Many of the schools are doing free lunch pick up every weekday no questions asked. Like you I personally don't need to use these options but I'm happy to spread the word for those who might need the help.

    Nice advices, simple yet fulfilling meals!
    I'm vegan myself and can just give an advice on including more healthy fats into your diet such avocados, nuts and seeds. Sunflower seeds are good option: they are cheap and filled with Vitamin E.
    Another thing I noticed is that you guys are not really eating a lot of fruits or? Maybe drop a couple of apples in, these are super cheap too :)

      I don’t eat a lot of fats because they really bother my stomach- nuts, seeds, avocado etc
      And yes! In these videos I don’t add a lot of fruits for me in the winter I don’t love fruit but I do in the summer months!

    I am loving all of your recipes! They have been helping me come up with simple and cheaper ideas. I really want to make the oat breakfast bread, has anyone made it with old fashioned oats instead of quick oats? I only have the old fashion kind, and I am wondering if it would need more water?

    I like to layer my tortillas for enchiladas instead of roll up. It seems to use fewer for a large casserole dish. Just cut to fit. I'll have to try that "duck" sauce.

      Just wanted to add that you might be able to puree some of the vegis with broth and mix with tomato sauce to stretch it out. We aren't plant based but always looking for ways to save a find new recipes

    I’m newer to your channel and have been loving your videos! I made your ramen recently but used the lotus foods brown rice ramen noodles and it was delicious. I have a very restrictive diet for medical reasons and am trying to eat more plant based so your recipes are such a fit because they’re simple yet delicious. I lost 40 pounds on WW a few years ago and have been stagnant and maintaining at a healthy weight but I would love to make a second push into loosing a little more.

      Lived in New Mexico 19 years, enchiladas go faster when layered like lasagna, most locals brought that kind of enchilada to potlucks

    Awesome meal ideas! I've also seen a cheese sauce made with cauliflower that could be added to several of those meals to kick them up a notch. It can be made vegan 😀

      A yam and a sweet potato are different-- the yam is sweeter and often used in more dessert recipes HOWEVER I will say there isn't much of a difference that I notice-- SO YES!! You can absolutely try it with a sweet potato it'll still be amazing!!

    I want to share with you and your followers a recipe I use for beans and rice. Brown rice: 2 cups in a large pot full of water. Cook 30 min, drain, cover & let steam finish. Very yummy cooked this way, and most arsenic removed by diluting the water. Now the beans. I use pinto, but really most types will work. I cook up a pound of pinto in the instant pot for 25 min. Then I transfer to a pot and cook on stove for about another 30 min. This will turn the water into a gravy. Then I add 1 tablespoon taco seasoning and 1 teaspoon garlic powder. Now we have a nice bean gravy to pour over very tasty brown rice. An alternative would be to mash the beans and turn it into refried beans. Your choice. Bon Appetit

    So, new here! Love your videos but I do have a question-- when roasting frozen veggies-- don't they come out mushy? I've never done this and I'm not sure what to expect....

      Welcome! I'm so glad you're here! And no they don't because you roast them at such a high heat for so long the water evaporates and the veggies usually become a tad crunchy! The longer you bake them the cruncher they become!
