    I just tested mine. Same model is the one you have. I put a very sensitive sensor that I use for telling the temp and humidity of AC units / heater units. The unit doesn't actually stay at 80-85. It really stays stable at 105, which is why they removed that option. I think the wire heaters wires are to thick to operate that low of a temp. Again, I set mine to where it would be around 85 and it does stay at around 105, usually hitting 115 then falling to 105 respectively.

    Also, I've never used mine under 120 anyway. I have followed recipes in the book and the lower temps never work out.

    Someone has offered me an old excalibur unit, but it is missing the front cover. Is this necessary to operate the dehydrator?

    My Guess - they did it because the temperature of the machine must not be very accurate.. in this way - they don't need to worry about someone saying its not really 98 degrees... most folks wouid just set to 105 and be done with it.
    Easy choice now on high end dehydrator... Sedona for the win!
