Nice video Alderic. Shoutout from Canada. I have a question for the rendang aficionados: When you make beef rendang, it takes hours to develop the richness of the sauce and the texture of the beef. But if you make chicken rendang the same way, 'hours' long cooking would turn the chicken meat into 'mush.' So my question is, how do you let the sauce develop the taste without overcooking the chicken? TIA.
thank you! not an expert on this but my take would be to go with a lower flame for longer or simply letting the rendang sit on the stove top overnight. It's the reason why leftovers seem to taste better. another way might to use a chicken bone broth after you have cooked the rempah. Either way, I think rendang is such a flavorful recipe that it sort of works itself out. let me know if you find the way to do it!
