    Laksa Speedrun. Respect!
    I started this series predicting that laksa variance is not big. And this would be a weak series.
    But i find myself feeling your frustration now and am now invested in your hero’s quest to find a 3p laksa.
    Where you go. I will follow!

    I like thin beehoon, tau pok, cockles, prawns, fish cake, laksa leaves. Not too spicy that it’s overwhelming the haebee and sweetness of the broth, not too thick, smooth easy to drink.

    You choose bee hoon, it drained away yr broth,
    You choose yellow noodles, it taste alkaline
    You choose kway teow, it turn mushy
    E noodles din make the mark, so don’t u think using thick bee hoon is a brilliant idea? It don’t drain yr soup, it doesn’t interfere with the flavour of the soup, and it doesn’t turn mushy

    Noting down that Ep6 is when Alderic broke down. 😂
    The perfect Laksa is slurpable, strong laksa leaf smell and taste, soupy, has lemak coconuty taste, strong seafood dried shrimp flavour, with thicc ass pre-cut bee hoon cause they dont suck the delectable soup away from you and have the slippery texture AND you can scoop it and eat WITH the broth, topped with must-have cockles and beancurd puffs.

    I crave for laksa the most on the day after a night of heavy drinking. There is just something about the spicyness and just the right amount of coconut creaminess that seems to soothe and cleanse my stomach. Not sure why I'm writing this, but wondering if this could help you capture the "mood" or taste of what we really want from a bowl of laksa?

    @ryang628 3 หลายเดือนก่อน

    Re: 7:32 . Yes Alderic, Valid! By the way, what is your basis for saying that malacca laksa is the origin place of singapore laksa (I'm not refuting your claim, just want to be clear)? Could it be that these are two separate styles of nyonya laksa that actually developed independently, just like malaccan peranakan, penang peranakan, singapore peranakan are separate threads of malayan peranakan??

    • @Alderic.
      @Alderic.  3 หลายเดือนก่อน

      possible! mainly, I read off wiki and secondly, the godfather of Singaporean laksa married a Nyonya. I'd have to consult a historian for the truth but I'm happy enough with the current explanation.

    • @ryang628
      @ryang628 3 หลายเดือนก่อน +1

      @@Alderic. After just checking with Chef Phil (consultant for The Little Nyonya) and another knowledgeable Peranakan, here is my current understanding, to which I'm open to corrections:
      1. Yes, Singapore laksa likely originated in Melaka. However, the former has evolved sufficiently away from the latter that they are no longer expected to be the same dish. This is akin to Thailand, HK, Singapore, KL having distinct versions of wanton mee, and HK wanton mee not being more legitimate/authentic than any of the other versions due to enough time having passed since the dish was first exported out of Canton.
      2. While Melaka laksa and Singapore laksa are both "Nyonya laksa", ironically, this label is now more associated with latter than the former simply because Singapore is the heavier-weight city than Melaka, haha.
      3. Laksa in both Singapore and Melaka originally and still generally uses laksa leaves; the bowls omitting it are likely a modern deviation (abberation?). However, do note that the nickname "laksa leaves" (for Daun Kesum or Vietnamese coriander) was coined after the dish, not vice versa, so do not assume that every laksa _essentially_ contains laksa leaves, for example Sarawak laksa does not require laksa leaves; incidentally, the laksa that has the densest concetration of laksa leaves is probably Kelantan laksa.
      4. It was Singapore who started adding cockles to laksa, and the bowls in Melaka containing cockles are either trying to cater to Singaporeans or at least inspired by Singapore laksa. That is, whether or not "Nyonya laksa" contains cockles depends on whether you mean Melaka laksa or Singapore laksa.
      5. A related analogy: even though India's paratha is similar (not identical) to Malayan prata (roti canai), it's arguable whether the former is the origin of or more authentic than the latter: if I want to find the best representation of prata, I would stick to Singapore/Malaysia and exclude India.
