    Recipe for 500g of seasoning
    (40kcal/100g)
    Ingredients:
    1 Cup Salt (400g)
    10x Chili, dried (2g)
    6x Bay leaf (1g)
    2 tbsp Pepper, black (10g)
    2 tbsp Garlic powder (16g)
    2 tbsp Onion powder (10g)
    2 tbsp Rosemary, dried (6g)
    3 tbsp Thyme, dried (6g)
    2 tbsp Marjoram, dried (2g)
    2 tbsp Curry powder (10g)
    6 tbsp Paprika powder (30g)
    2 tsp Mustard powder (11g)
     Various other dried herbs can also be used to make this seasoning.
    Preparation method:
    - Give the Chilis, bay leaves, pepper, onion powder and garlic powder into a blender / food processer and add 1/3 of the salt, mix until you have a fine powder.
    - Put the powder into a sieve with a bowl underneath.
    - Give the rosemary, thyme and marjoram with another 1/3 of the salt into the blender and mix them as well and put them into the sieve.
    - Give the last ingredients: Paprika powder, curry powder and mustard powder together with the last 1/3 of the salt into the blender and mix again.
    - Sieve all powdered ingredients through the sieve and mix everything well with a spoon.
    - Fill the seasoning into airtight container, jars or bags (don’t use tin boxes, they will rust).
    This salt can be used in various meats and meat dishes it also goes well with tofu or potatoes.
    Preparation time: 10min
    Start to Finish: 10min
    The seasoning can be kept for at least one year in an airtight container.
    Don’t keep the salt much longer, it will lose its taste after a year.

    Is this a spicy or sweet rub. And could you use it on brisket, ribs, or pork?

    • @cookswiss2024
      @cookswiss2024  3 ปีที่แล้ว

      Hi Scott
      This Rub is neither spicy nor really sweet.
      We use this in Switzerland and Europe to season Pork, Chicken or the cheaper cuts of beef or lamb. Both for long or short cooking parts of the meat.
      To be honest i really like the American 🇺🇸 Brisket and Ribs but i haver never smoked them myself, therefore i don’t know if it would be good 👍🏻 could you try it ;)

    Does it blend well with all kinds of meat? How about fish? Do u have other videos like this but for fish?

    • @cookswiss2024
      @cookswiss2024  4 ปีที่แล้ว +1

      @ ProdotPuypuy
      I use it for pretty much all kind of meat, maby more for the cheaper cuts. For the Filet or Sirloin i use it sometimes but mostly just salt and pepper.
      For fish it works as well but more if you make it “meuniere”, season, flour and then fry it in a little butter or oil.
      If you steam or poach the fish i would rather use this herb salt: th-cam.com/video/dTmKXPhSVXQ/w-d-xo.html

      I would just sprinkle it with some of it like it would be salt.
      For 1kg maybe around 20g of seasoning.

    One cup of salt? Why?

    • @cookswiss2024
      @cookswiss2024  4 ปีที่แล้ว +1

      Hey Abi Nor-Mac
      This meat seasoning is used to quickly season your meat and then cook it. It is not like a marinade which you leave to marinate for hours. We use it a lot for pork or chicken or cheaper beef cuts.
      I will only season with this seasoning and nothing else, this should explain the salt.
      Maybe this is a European thing :)

    No need for a cup of salt, far too much. Spices are preserving well without salt, you can rub salt on the meat when needed.
