I decorated family birthday cakes for years, with buttercream icing...not meringue...and as soon as I saw Kate snip off the bottom of those bags as she did, I thought, "Uh oh!" You explained the issue perfectly! Try again on this, Kate, just so you can experience the different results--those cake tips can be lots of fun!

So, if you do this again, you want to be finicky, take your time, pushing and pulling out the tip so it falls at the right place. Sometimes the tip pushes out of the bag when you cut too much off. Hint for multiple egg whites: break one into small bowl. Put it in the big bowl. Open another egg into the small bowl. Put it in the big bowl with the other one. repeat. If there is a bad egg, it will only be by itself in the small bowl, and won't damage the several other good eggs. This also works to keep the last egg's yellow out of the whole batch. I like your meringue design better than the original. )))

I have a cut glass crystal that hangs off a curtain rail and it sprays lots of lovely mini rainbows throughout the house most mornings,😊 which causes me much happiness to start my day! Just love that we do similar things and love how you chat away like we're all in the same place enjoying time together ❤ l make " bombe alaska" at times( the grandees love to see it come out of the oven-& are always amazed that the internal core of icecream is still cold!) I learned to use a piping bag with a packet of instant mashed potato. It costs very little and it didn't take long to mix up so you aren't 'invested' in it. You can practice with it, scrape it back into the bag again and again until you are confident with it. If you try this with cream it will eventually melt with the heat of your hand.

I have my mother's 50 year old Kenwood stand mixer and it is still going strong. I regularly use it to bake and to make bread. Best gift is to be with family. Great cake - I love pavlova and meringue - Yum
May 25 2023 320 pm. Hello Kate Im watching u everyday in my sewing room. Im 60 . My mom made those when it was cold outside and Christmas time said this is Christmas snow that Santa left to make these snow drop cookies! Yesss ! Because it melted in ours mouths. For the longest we believed ! 😊😊

I use the decorator bags for a number of things. I was such a clutz trying to fill the bag with one hand and hold it with the other. I found that taking a tall narrow jar of some sort (a pint and a half canning jar, in my case) and putting the bag inside with the top folded around the edge of the glass, made filling it so much easier. That cake and the spread looks fantastic, in any case.

Dear Kate, how delicious that cake looked! I am a baker’s daughter and have made lots of piped desserts, as well as meringues similar to yours. I always use a little mixer similar to yours, works just fine! I think, as well as the piping bag tips not being cut away quite enough, the addition of liquid food colouring does make the meringue less stiff. But who cares when the taste is so delish? There are paste colourings available if you ever decide to go into the bakery business in a big way. Just kidding. I make my meringues, plain white so not nearly as fancy looking as yours, with a sort of dip in the middle, fill that dip with whipped cream and then the fruit on top. This dessert is called Pavlova in Canada and I believe originated in Australia? Thanks for sharing your lovely family. Belated Happy Birthday John!!

That cake looks gorgeous, I would like to make one for my husband as he is coeliac and can not have wheat , so that would be perfect. I could be wrong , but I suspect the reason the tips did not work is because the bag was lower than the tip , so you got the shape of the bag , not the tip ? That would be my guess , but it did not really matter as that cake looked amazing anyway .
When you first showed the eggs in the carton, it looked to me as if the eggs from your neighbor's hens were lilac in color! And not until you picked up the 4th egg did i realize the lilac color was coming from your marvelous window!
