    I’m not sure if I missed this or not. But do you have to use gelatin sheets? Or can you use the gelatin powder?

      You need to use gelatin sheets for the marshmallows if you don’t have the sheets don’t use more than 1 tsp of gelatin powder because it’s a lot stronger than the sheets

      For this batch would recommend only using 3 gram of gelatin powder. And add about a tbsp of water to it

      Thank you so much! I recommend eating them within 3 days or dust a little extra corn starch over them and keep in an airtight container. For fresh marshmallows I recommend eating them within a week or they might become slightly sticky

      Nope not needed!😄 they’ll slowly start to set because of the gelatin and by dusting the powdered sugar & corn starch over them😉

    whats the syrup temperature? Is it enough to kill eggs salmonella?

      Oh sorry forgot to mention I heat the syrup up to 100-110 degree celsius (220-230 F) it will kill the bacteria.

    Did you bake these at all? You had egg whites in your mixture and I am thinking about making this but I don't want to get sick

      Nope, these aren’t baked. Depending on where you live, most raw eggs are actually safe to eat. But, if the sugar syrup is heated to the correct temperature(check the description), it’ll actually be cooking the eggs as you whip it in and should therefore be nice and safe to eat!

    Hey! Love this sooo much! I wanted to ask if you, by chance, knew if I could sub 1 teaspoon of gelatin powder for 1 teaspoon of Agar Agar?

      Hi! I would not use a lot of agar agar for this recipe since it’s much stronger than gelatin, so use max. 1 tsp for the whole recipe or else it’ll become too firm

      Really fast😅 so you have to work quickly before it starts to set. In any case your mixture starts to set you can microwave it for literally 2-3 seconds (no longer!) and it’ll be a bit runnier and easier to work with again. But try not to do that too often
