I don’t know what part was more fun, when Ann screamed NO when Jane was going to peel the orange or Ann’s reaction to the lemon in the dressing when she tasted it.

I'm off to the store for a golden beet. I've not seen the others in the stores here. I prefer citrusy dressings like you, Ann.
When Jane said she'd peel the orange for Ann and Ann squealed, "No," I almost wet my pants. At first, I thought Ann looked under the weather until she began making her dressing. I hope you are well, Ann.
I make 321 dressing, replacing the maple syrup with 1/4 c orange juice and adding Mrs. Dash onion and herb. I also use Westbrea salt-free mustard. My husband hates mustard but gave my version of 321 a ten. He has no idea what's in it. lol

Thank-you for these wonderful dressings! The Dragon would be great in a stir fry that had noodles......and the citrus would be great in a romaine wrap. Lately, I've been using red pepper hummus and avocado and spices (cumin) mix'd for a dressing-sometimes leaving thick and sometimes watering down a little w/warm H2O-rich and tasty.Ann's lemon balsamic looked good...........
Thanks for the recipes and inspiration and for being so fun to watch~

ladies love you guys so glad to have stumbled upon you.... ok omg here is what i have as a dressing ... i was so desperately looking for a fat free dressing cuz i used to eat tons of big salads and for the last 20yrs used a dressing of just olive oil, lemon with herbamare&black pepper and garlic of course and i thought it will be no biggie for me to get rid of oil i already use lemon (i don't use vinegar) so it should be easy WELL, NOW did i get to know myself in the first few months i did a cleanse and practically starved cuz i didn't realize it was the oil in the dressing that must've had me eating those huge salads and i didn't know what to do i thought i could do it but i couldn't SO what i believe Ann said about just "finding your dressing" is so true cuz once i "found it" i could take a break on figuring it out and could get started on getting all the greens in me and other things cuz you can creative with "your sauce" for other uses on things other than salads until you learn more. SO here it is yum......
i'm gonna give you the recipe but i do it different and once you do it you can be more casual about how you throw it together and even try other ideas.....
    1 whole red bell pepper
    1/2 jalapeno
    4 medjool dates
    1/2 lemon, juiced
    1 clove garlic
    2 green onions
**Blend it all up with however much water you want, not like tons of water, enough to make it a sauce
*****once blended then pulse in1 cup of fresh basil leaves
What i do cuz its easier, things more often around...
any red, yellow or orange bell pepper or more often a bunch of those multicolored mini sweet ones instead
    lil pinch of cayenne pepper
    3-4 dates
    1/2 or more lemon, juiced
more garlic depending upon mood and food
regular yellow onion, as if i cut 1/4 of an onion and cut that in 4 pieces, as much as ya want really
the basil is so good but when out i have used cilantro but not as much quantity as the basil

To zest a peel that has already been taken off of the orange, or lemon, just pick it up and put your index and middle finger on the side of the pith and gently push the outter rind against the zester, moving the zester gently back and forth to zest the peel, just do this carefully so you don't zest a knuckle on another finger. You could also wrap it around a glass, or around another orange or lemon, holding it in place with fingers or toothpicks, and zest it.

I do not have the cookbook and need the amounts for the tamari sauce, the maple syrup, the ginger , the peanut butter please for the dragon dressing. • @robinwhite5962

Dragon Dressing: 1/2 cup natural peanut butter, 3 Tablespoons rice vinegar, 2 Tablespoons low-sodium tamari, 1 to 2 Tablespoons 100% pure maple syrup, 1 Tablespoon hot sauce (Sriracha), 2 cloves garlic, peeled, 1 1/2 teaspoons minced fresh ginger, 1/3 cup water - more or less depending on whether you want it thicker or thinner. Blend well.
My favorite dressing is the Peanut Dressing from the Engine 2 Diet Book: 4 Tablespoons chunky peanut butter, 2 Tablespoons cider vinegar, 1 Tablespoon water, 3 Tablespoons agave nectar, honey, or maple syrup. Options: 1/2 teaspoon chopped jalapeno or serrano pepper, Black pepper or crushed red pepper to taste; or 2 Tablespoons chopped green onion. I like to use Sriracha sauce and vary the ingredient amounts according to my mood. I love it on absolutely everything.

Here are a couple of Engine 2 recipes that might work:
Sesame Seed Dressing: 1 Tablespoon home-toasted sesame seeds, 2 Tablespoons maple syrup, 2 Tablespoons low-sodium tamari, smidge of water. Whisk the ingredients in a bowl.
      or,
Teriyaki Sauce and Dressing: 5 Tablespoons low-sodium tamari, 3 Tablespoons maple syrup, 1 Tablespoon tomato paste or ketchup, 2 teaspoons minced fresh ginger, 2 Tablespoons toasted sesame seeds. Blend together.

Did you remove the skins before roasting or after? Also, try golden beets--they are a little less "dirt" tasting. BTW, that earthiness is part of their appeal, and you can't get rid of it completely. There is a certain level of getting used to the flavor that some people have to do.
