Tommy, question. Instead of using a cast iron pan, Could I sear these ribeyes on my cuisinart flat top griddle at a very high temperature? Then would I continue to cook them on a lower temperature on the griddle to get them to medium to medium rare? Suggestions?

Now I am going to have to try this. I think another good option for the meat would be a chuck roast, smoked @ 225 for 3-4 hours, then sliced thin.
