just was thinking as you were stoking the firebox up........ could easily step that smoker setup up a few notes and cover that firebox in cob or mortar with rock or brick for aesthetics and place a cooking stone on the box then build a rounded top oven on top for breads, pizza, baked goods........ plumb in a little pipe with a damper to control how much smoke goes in the oven. hell..... could bake fish in there too.
I have eaten it once, much prefer pork bacon. You are magic with meat I didn't see anything but fat on that animal and you were able to find enough beef to make some bacon. I noticed Caleb did not take seconds, he must like pork better too. Your son's are almost unrecognizable, I can't tell the two oldest ones apart anymore. Great video really enjoyed it 👋

Add that beef fat to your deer burger. Pork fat is good to use but around here beef fat is used about as often for deer burgers.

Probably the same….. it’s able to hang in the smokehouse all summer in necessary this way…… pre-cooking before frying is no problem whatsoever.
Next time use the rib plait instead of the flank the flank is more for burger
