Flan + The Effect of Using Whole Eggs vs Egg Yolks

  • Flan (yield: 6 4oz ramekins)
    3/4 c (150g) sugar
    1/4 c (57g) water
    2 eggs + 5 egg yolks*
    1 14oz can (396g) sweetened condensed milk
    1 12 oz can (354mL) evaporated milk
    1 tsp (4g) vanilla extract
    1/2 tsp (3g) fine salt
    1. Mix the sugar and water together in a medium size pot and place over medium heat. Once the sugar caramelizes and reaches a dark amber color, pour a thin layer into the bottom of each ramekin.
    2. Add the eggs and egg yolks to a bowl and mix until combined.
    3. Add the sweetened condensed milk, evaporated milk, vanilla, and salt to the eggs and mix until combined.
    4. Strain the mixture twice to ensure a smooth custard.
    5. Divide the mixture between the ramekins and set the ramekins in a 13in x 9in baking pan or a roasting pan.
    6. Fill the pan about 1/3 - 1/2 of the way with hot water and bake in a 325F (163C) oven for 40-50 minutes or until the flan wobbles slightly at the center when the ramekin is tapped.
    7. Remove the ramekins from the water bath and let cool until they are room temperature before chilling in the fridge overnight.
    8. The next day, run a thin knife around the outside of the flan and tip over.
    * For a firmer flan use 4 whole eggs or for a richer and silkier flan use 10 egg yolks

    I love that his descriptions never seem to have a "right" or "wrong" attitude towards these. He mentioned both methods and described their attributes plainly before offering a third option.

    My grandma used to make the best flan, always taught us what you said, she’d only teach members of the family that actually took interest and I never got to learn it cause I’m young but man I remember eating that Flan that came out of and old pot and it tasted better than any other flan, im now an adult and I still don’t have the recipe but you’ve gotten me an excuse to get together with my mom and do something ❤

      1 can of condensed milk (I use great value brand cause it’s thicker)
      200 grams of heavy cream
      320 millimeters of whole milk
      3 yolks
      3 whole eggs
      1 spoon of vanilla extract
      mix everything together with a fork
      After mixing, strain it and pour it on pan, cover with foil, and set the pan in Bain-marie
      bake on Bain-marie on 320F for 1 hour and 20 minutes
      Caramel:
      200 grams of sugar
      80 millimeters of water
      Melt the sugar on medium heat, carefully to not burn, then add the water and mix it non stop till it becomes a smooth caramel.

    I usually do 5 yolks only. But lately I've been thinking about replacing 1 yolk with 1 whole egg. Although I really like my flan creamy, I've thought "adding at least 1 whole egg can give a slightly firmer structure + more volume + protein. Tastes the same so it's a win-win.
    4 yolks and 1 whole egg + the rest.

    Don't knock the whole egg version until you've tried it. It's got a real substantial and heavy dense texture to it that is very satisfying. If you love custards like I do it's a really interesting departure from what you're used to that's just as delicious.

      It's actually easier than you think. I'm sucks at baking, even my baker friend offer me her brownies recipes, still freaks me out. But flan has no gluten in it, as long as you follow the recipe, filter your custard, eyes on the caramel on stove, you're good to go. I've made it few month ago and almost teared up because after years of studying recipes and couples failed trial, I made a textbook flan😊

    I know this as two different deserts whole eggs is quesillo and egg yolks is flan. Both good but quesillo is Venezuelan and what I prefer since I grew up with it

    In my country, we consider sellers who use more egg whites as lower quality because it's a cheaper way to make it since using pure yolks only cost more eggs. Using pure yolks also makes it smoother. You can even see the ones with egg whites in this video crack more. So pure yolk leche flans are more preffered and considered as higher quality in my country.

    I love whole eggs. I can’t eat more than a spoon if it uses only yolks, too rich for my liking. Also, my grandma would put citrus (calamansi/kalamansi) cut in halves but not squeezed in the mixture and let it sit for awhile and then strain before cooking. Perhaps lemon/limes zests could work too.

    ONCE I tried it like that (had extra yolks that didn't want to waste) and it was the best and smooth flan I have ever done.

    Filipino version uses 8-12 eggs. 1:1 ratio of condensed and evaporated milk.

    Understanding this is only about the eggs, but just as important as the egg ratio is to not whisk in too many air bubbles and always run the final mixture through a fine mesh strainer. 👌🏽

    There is a brazilian flan made with 20-30 yolks, coconut water and shredded coconuts, it’s called Quindim. Absolutely delicious 😋😋

    In our family recipe, we use whole eggs and evap milk. I love the fact that it's not too rich then you tend to eat more 😅😂

    I always use whole eggs whether in flan, custard, pudding or lemon curd using a double boiler. Never had any complaints.
